I sprouted the whole mung beans (with green skin) using a fine mesh strainer during cold winter months, and they are ready to use in 3 to 5 days of sprouting even when the temperatures are low during the cold weather! Many of us like to enjoy the sprouts raw by adding them to salads, however I think it's much safer to lightly cook the sprouts prior to eating, plus the mung bean sprouts taste much better when you cook it in my opinion! how long to cook sprouted mung beans?

To make mung bean stir fry, you just need to cook the stir fried mung beans for about 2 to 3 minutes until they are lightly cooked!

Based on many external factors, like the temperature, humidity etc that the sprouts are exposed to, the mung bean sprouts may sometimes taste a little bitter which is normal. However, in this stir fry recipe we also use a little brown sugar and if your mung bean sprouts taste a little bitter in taste, you can adjust the amount of the sugar slightly to balance the taste. The mung bean sprouts may also appear a little pink in color at some parts, which is usually caused by environmental stress factors (related to lighting) and that's also normal.

mung bean sprouts 2 cups
salt adjust to taste
garlic powder 1 teaspoon
soy sauce 1 teaspoon
brown sugar 2 teaspoons
black pepper 1 teaspoon
turmeric powder ½ teaspoon (optional)
butter 2 tablespoons
olive oil 1 tablespoon (or sesame oil or any oil you prefer)
more optional ingredients:
red chili flakes 1 teaspoon for topping if desired (only if you like to add more spiciness)
scrambled eggs (cook the eggs separately and mix in with the sprouts stir fry)
how to make mung bean sprout stir fry?

step by step instructions to make stir fried mung beans
Step 1 - Rinse the mung bean sprouts very well and keep it aside.
Step 2 - Melt butter in a large pan and then add the sprouted mung beans to the pan.
Step 3 - Add salt, olive oil, soy sauce, brown sugar, black pepper, garlic powder and turmeric (if using) and mix well to combine with the mung bean sprouts.
Step 4 - Keep the heat in low to medium and stir fry the sprouts for about 2 to 3 minutes until the sprouts are lightly cooked but still crunchy in texture and all the flavors are well blended with the sprouts.


Step 5 - Top with red chili flakes if you want more spiciness or mix in scrambled eggs if desired!
Step 6 - Serve hot with rice or add to salads, scrambled eggs, soups, stews etc as you like!

Stir Fried Mung Bean Sprouts - Cooking Sprouted Mung Beans
Ingredients
- 2 cups mung bean sprouts
- 1 teaspoon garlic powder or minced garlic
- 1 teaspoon soy sauce
- 2 teaspoons brown sugar
- salt adjust to taste
- 1 teaspoon black pepper
- ½ teaspoon turmeric powder optional
- 2 tablespoons butter
- 1 tablespoon olive oil or sesame oil or any oil you prefer
more optional ingredients:
- 1 teaspoon red chili flakes for more spiciness if desired
- scrambled eggs as you prefer
Instructions
