Baby bella mushrooms are simply little older version of white button mushrooms but younger than portobello mushrooms. In fact, white button, baby bella and portobello are all different stages of the same mushroom variety. Baby bella mushrooms are also known as cremini mushrooms.
When the mushrooms are picked at their stage of growth, they are known as white button mushrooms, when they are picked at a little older stage (middle stage of growth) they are known as baby bella and when they are fully grown they are known as portobellow mushrooms. So they are all basically the same mushroom variety, but the difference is only based on at what stage of growth they are. In brief, baby bella is at an older stage of growth than white buttons, so they have more firmer texture (not as much as portobello) than white buttons. Portobello is fully grown white button mushrooms where as baby bella comes in middle with regards to their growth stage compared to white buttons and portobellow (baby bella is older than white button but younger than fully grown portobello mushrooms).
