    I used red bell pepper and orange bell pepper in this roasted bell peppers recipe, because that is what I had at the time.

    Also, the red bell peppers and orange bell peppers are very coloful peppers that make very colorful vegetable side dish.

    So if you want a very colorful vegetable side dish for your dinner, red bell peppers and orange bell peppers make great choices!

    If you want to use yellow bellow pepper and substitute red or orange bell pepper with yellow colored pepper, you can do that. If you have the tri color mixed bell peppers that contains one red pepper, one orange and one yellow bell pepper, you can use all three bell peppers as well, though you will need to slightly increase the amount of seasonings accordingly, to suit for three bell peppers. In fact, I had this tri color bell pepper package and I had already used the yellow pepper, so I decided to use the remaining orange and red bell peppers in this recipe. In brief, you can use any of the red, yellow or orange bell peppers from the tri color mixed bell peppers and you may use all three bell peppers if you want to!

    Just make sure to adjust the seasonings accordingly and also make sure to lay them in a single layer in the baking sheet, so they will get roasted evenly. If you crowd the pan and place the slices on top of one another, they may not get roasted evenly, so just make sure to use a large baking sheet and lay them in a single layer even when you use three peppers! If you have a green bell pepper, you may substitute any of the other peppers with green bell pepper too.

    It is best to slice the bell peppers as long slices or strips for roasting. I just roughly sliced them in medium sized long strips, after removing the seeds. If you want more uniformily sliced peppers, you can do that, but roughly slicing the peppers in long strips works well too! I didn't make the strips too thin, so if you slice them very thin, they may get roasted even more faster. I have also just sliced a few remaining pieces roughly into squares, which is also fine.

    To get the flavor out of the red and orange bell peppers, you need to roast the strips for about 18 to 20 minutes in an oven preheated to 450 degree Fahrenheit. The pepper strips need to be roasted well so there are brown spots on the skin, and it is at this stage that they taste the best! If the bell pepper have not formed the brown spots on the skin, I recommend roasting the peppers for another couple minutes more until they have got that brown spots which means they are well roasted!

    So here is how you can make easy, delicious oven roasted peppers using this easy recipe!

    To make oven roasted bell pepper strips, we use the following ingredients. As you know, the main ingredients that we use are orange and red bell peppers!

    • bell peppers 2 large (I used red and deep orange bell peppers)
    • salt as needed
    • olive oil 2 tablespoons
    • onion powder ½ teaspoon
    • garlic powder 1 teaspoon

    • Wash the bell peppers very well and slice at the top of the peppers to remove the stem and also scrape out any seeds.
    • Slice in slighty large long slices (some medium sized pieces are fine too).

    • Place the sliced bell peppers in a large bowl and add the salt, olive oil, onion and garlic powders.
    • Mix well using a large spoon or spatula so the salt, oil and spices are evenly mixed with bell pepper.

    To roast the bell pepper slices:

    • Preheat oven to 450 degree Fahrenheit.
    • Prepare a baking sheet by lining with good quality aluminium foil or you may use a non slip baking mat.
    • Place the seasoned bell pepper in a single layer in the baking sheet lined with foil.

    • Bake in the preheated oven for about 18 to 20 minutes until the bell pepper slices are well roasted and brown spots have developed!
    • Once they are roasted well, transfer the baking sheet from the hot oven and allow the peppers to cool down slightly.

    • Transfer the roasted bell peppers to serving plates, serve as it is or enjoy as a healthy vegetable side dish with rice, pasta, eggs etc for dinner, lunch or any meal!

    how long does roasted bell pepper strips last?

    Since we are making just two small servings using two bell peppers, it is perfect to be used on the same day even if you are making for just two people. However, if you want to save this for later or if you make multiple batches so you can have leftovers later, you can transfer the prepared roasted bell peppers to air tight food containers (once the roasted peppers are cooled to room temperature) and store in the refrigerator for another 3 to 4 days!
