Sauteed, caramelized onions and sauteed mushrooms made on stove top using sliced shiitake mushrooms makes an easy, healthy mushroom side dish or you can use it for topping pizza or use it as an easy mushroom filling for tacos, burgers, burritos, sandwiches etc! This is a perfect vegetable side dish with rice, noodles etc for lunch or dinner if you like mushrooms and this is an easy way to cook mushrooms with onions!

The kind of mushrooms I used in this recipe is shiitake mushrooms which came as cleaned and sliced so there was less work involved with regarding to cleaning the mushrooms.
I am not a big fan of mushrooms but I do make them sometimes and this one is easy and tasty!
how long to cook mushrooms and onions on stove top?
As I mentioned, I used thinly sliced shiitake mushrooms which is easier and faster to cook so the cooking time of mushrooms is only about 6 to 8 minutes in total (this is after caramelizing the onions)!
However, you may use other kinds of mushrooms too in this recipe, like sliced button mushrooms but the cooking time of the mushrooms will vary if you use a different variety. The sliced shiitake mushrooms are thin and easy to cook so once the onions are caramelized, it is super easy to make this dish! The caramelized onions adds a great flavor and texture to the dish, but you can decide if you want to caramelize the onions for longer time to obtain more flavor and a deeper golden brown color for the onions or if you want to just sautee the onions for a lighter browned onions. The cooking time of onions will depend on how much flavor or color you want for your sauteed, caramelized onions and since we went for a deeper color here, I had to cook the onions for about 25 to 30 minutes to just saute and caramelize the onions first.
If you want only a lighter color for lightly sauteed onions, you can just quickly saute the onions in about 15 minutes as well. So the total cooking time to make sauteed, caramelized onions and then to cook the mushrooms took around 45 minutes, but you may reduce the cooking time to about 20 to 25 minutes if you only want lightly sauteed onions! So here is how you can quickly and easily make caramelized onions and mushrooms on stove top using a pan or skillet.

To make easy, delicious caramelized onions and mushrooms, we use the following ingredients.

- onions 2 large (I used yellow onions)
- mushrooms 5 oz sliced (I used shiitake mushrooms)
- garlic 2 teaspoons fresly minced (or use garlic powder)
- soy sauce 1 tablespoon
- tamarind sauce 1 teaspoon (or use lemon juice)
- salt adjust to taste
- olive oil 2 tablespoons
- butter 1 tablespoon
- black pepper ½ teaspoon (adjust to preferrence)
step by step instructions
- Slice the onions in slightly thin long slices and transfer it to a large frying pan.
- Also add the olive oil and enough salt, let it cook for few minutes until the onions begin to wilt.
- Keep the heat in medium and sautee the onions for about 20 to 30 minutes or until the onions are almost browned and caramelized to your preference.
- Stir the onions in between and adjust the heat between medium low so the onions won't get burnt during the process (you may also use a non stick pan for making it easier). You will need to cook for only lesser time if you only want lightly caramelized onions!
- For deeper brown color, you will need to saute the onions for few more minutes.
- While making caramelized onions or just sauteed onions, make sure you stir the onions often in between to avoid the onions burning at the bottom of the pan and for even cooking.
- Once the onions are caramelized to your preference, you can add sliced mushrooms to the pan (which is washed and cleaned).
- Cook the thinly sliced mushrooms in medium heat for about 3 to 4 minutes until the water is released from the mushrooms and they are lightly cooked.
- Add butter and enough salt, stir well and continue cooking for another 2 to 3 minutes.
- Add the remaining ingredients also to the pan - soy sauce, tamarind sauce, garlic and black pepper, mix everything well and saute for another 3 to 4 minutes until the water is all evaporated and the mushrooms are well sauteed!
- Serve the caramelized onions and mushrooms while it's still hot for best results!
- You can add more seasonings like even more black pepper or red chili flakes if you like!
