    Sauteed and fried potatoes and onions tastes great and it is so easy to make! Southern style pan fried or sauteed, skillet fried potatoes and onions makes great side dish with pancakes, toast, waffles, eggs etc for breakfast, brunch or enjoy this as a simple, easy, delicious side dish for lunch or dinner! These are meatless vegetarian diced or cubed yellow potatoes (yukon gold potatoes) which are sauteed and shallow fried until lightly browned in a pan or skillet along with sliced onions.

Otherwise, fried potatoes and onions can be unhealthy if you use lots of oil, and they can be high in calories as well, so it's best enjoyed in moderation along with other healthy side dishes like green vegetables. Also, if you have diabetes or increased sugar/glucose levels in blood, potato dishes might not be a good idea as they may not be healthy for you.

Also if you grate or shred the potatoes (like in hashbrowns) to make fried potatoes, the cooking time will change. So here is how you can easily make fried onions and potatoes at home following this easy recipe.

    To make Southern style fried potatoes and onions, we use the following ingredients.

    • potatoes 4 to 5 (medium sized, I used yellow potatoes)
    • onions 1 large
    • salt adjust to taste
    • garlic powder 1 teaspoon
    • paprika 1 teaspoon (or black pepper powder, may adjust amount slightly to preference)
    • oil ½ cup (or as needed for shallow frying)

    • Wash and peel the potatoes (peeling is optional), dice in medium sized cubes.
    • Place the diced potatoes in a large sized skillet or frying pan.

    • Also chop the onion in small to medium sized pieces and add the chopped onion also to the pan or skillet.

    • Add salt, garlic powder and about ¼ cup oil (half of total amount), mix everything well to coat the seasoning evenly with the potatoes and onions.

    • Cook in medium heat for about 5 to 6 minutes (stir in between) so the potatoes and onions are lightly sauteed in the oil.

    • Cover the skillet or pan with lid and cook in low heat for about 9 to 10 minutes until the potatoes are almost cooked (potatoes should be softened by this time but it shouldn't be too soft because we don't want the potatoes to break once we stir them during the remaining time of cooking).

    • Once the potatoes are cooked for about ten minutes (as mentioned above), remove the lid, stir and cook in meduium heat for another couple of minutes.

    • Add the paprika (or black pepper powder) and remaining ¼ cup oil, stir to coat the potatoes and onion and cook in medium heat so the potatoes and onions will get lightly fried in the oil added to the pan.

    • Continue frying the potatoes and onions (while you stir in between so they are fried evenly) for about 8 to 10 minutes in medium heat until the potatoes are lightly browned on the outside and the onions are slightly caramelized!

    • Once the potatoes and onions are fried, transfer them to a serving dish, enjoy with breakfast pancakes, toast, eggs etc or serve for lunch or dinner as you like!

    If you want to make fried potatoes and onions crispy in texture, you will need to add more oil as needed and you will need to fry them for longer time until they are fried crispy. Also you may need to chop the potatoes little smaller in size if you want to make crispy fried potatoes easier. You can also slice the potatoes in long, thin slices similar to French fries instead of dicing in cubes. or you may grate or shred the potatoes if you want to make them crispy fast.

    In this recipe, we use a simple, popular combination of seasonings including spices like garlic, paprika and salt. You can also use black pepper powder or ground black pepper, dried minced onions, rosemary, parsley, red chili flakes, curry powder, garam masala etc if you wish. Adding a little lemon juice or lime juice can also add great flavor to potatoes and onions.
