1 - heavy whipping cream:

In this recipe for sweet cream pancakes, I have substituted half amount of milk with heavy whipping cream while I still used the remaining half amount of milk.
To substitute all milk with heavy cream in the above recipe, you can use simply use a mixture of heavy whipping cream and water or use a mixture of heavy whipping cream and any plant based milk like almond milk, oat milk etc or use any fruit juice of your choice.
Make sure to keep the ratio of dry flour to liquid for the best results.
2 - half and half:
To substitute milk with half and half in pancakes, use half and half diluted with water or any plant based milk just like we discussed above.
3- yogurt:
Again, you can substitute milk with full yogurt or you can dilute the yogurt with other liquids like water or fruit juice.
You can use greek yogurt or regular yogurt to make pancakes.
4 - sour cream:
Sour cream may also be used in place of milk just like you can substitute milk with yogurt.
Just make sure to mix the sour cream very well and dilute if necessary, to keep the ratio of dry flour to liquid.
5 - cream cheese:
Whipped cream cheese is another great option to use as a substitute for milk if you don't mind using dairy.
6 - evaporated milk:
Evaporated milk is another great diary replacement for regular milk! It is more flavorful and makes the pancakes more rich and delicious as well!
7 - condensed milk:
Condensed milk is sweet and thicker in texture so keep that in mind while you use sweetened condensed milk as a substitute for regular milk in pancakes!
