    Seasoned tofu scramble with Indian spices, soy sauce, garlic & veggies! This simple, easy and delicious vegan stir fried tofu scramble with spices and vegetables makes a very quick, easy and tasty vegetarian/vegan side dish for dinner.

    Making this tofus is super easy using a large non stick pan or skillet.

    Since we use two 12 oz tofu to make this delicious tofu & veggie scramble, make sure to use a large pan or skillet which makes the preparation easier, since we will need to flip & stir the tofu easily.

    If you are using a smaller pan, you will need to reduce the amount of tofu & other ingredients accordingly, to make it easier for you. I used one large sweet yellow pepper & also one 14 oz canned cut green beans in this easy tofu scramble. They add the perfect flavors along with the Indian spices, galic & soy mixture I used.

    Since I used canned cut green beans, it was easy to cook since the cooking time was lesser.

    If you use fresh green beans, they will be more crunchy in texture which will also be great. Also, you may use green bell pepper or red bell pepper instead of yellow pepper if that is what you have, though the flavors will slightly change based on the kind of pepper that you use.

    The best thing about this tofu scramble with spices & veggies is that you do not need to press the tofu in advance to remove the water content from the tofu, and also you do not need to cut or prepare tofu before cooking it.

    We do not even need to marinate the tofu before cooking for this easy recipe. In fact, we just drain the excess water from the tofu packets, and then we directly place the tofu blocks in the pan and start cooking. How easy that is?

    I didn't scramble the tofu too small, since I prefer slightly large pieces of tofu. I gently sliced the tofu in the pan using the spatula itself and scrambled a bit. That way, I had quite large sized pices of tofu in the scramble.

    If you prefer smaller pieces of scrambled tofu, you can scramble the tofu further based on your preference. For the spices, I used turmeric powder & garam masala powder which added color & flavor to the dish! For the flavor, I also used a good amount of fresh minced garlic & also some soy sauce. So here is how you can make this easy & delicious tofu scramble with vegetables & spices.

    We use the following ingredients to make this easy & delicious tofu scramble with spices and veggies.

    • extra firm tofu blocks 28 oz (two 14 oz packets)
    • cut green beans canned 14 oz
    • yellow bell pepper (capsicum) 1 large sized -- seeds removed and sliced in medium size pieces
    • oil 4 tablespoons
    • salt as needed
    • minced fresh garlic 2 tablespoons
    • soy sauce 2 tablespoons
    • turmeric powder ½ teaspoon
    • garam masala powder 1 teaspoon

    step by step instructions

    • Drain the excess water from the tofu packets and place the tofu blocks in a large non stick pan or skillet.
    • Heat the pan so the some of the water from the blocks of tofu will get evaporated.
    • Now gently slice and scramble the tofu using a good quality spatula. I sliced the tofu in little large slices and scrambled only a bit, since I prefer large tofu slices even in the scramble.
    • You may scramble or slice them to your preference.
    • Also add salt & garlic, cook in low to medum heat until most of the water content evaporates which takes about 2 to 3 minutes.
    • Add sliced yellow pepper also the pan.
    • Let this mixture cook for another 3 to 4 minutes until the yellow pepper also cooks slightly and the water from the pepper is also evaporated.
    • Add the oil & cut green beans (make sure to remove the water from the canned green beans before adding to the pan), stir in with the contents in the pan, let the mixture cook in medium heat for 2 to 3 minutes or until the tofu is beginning to lightly brown.
    • Once the tofu begins to brown, stir well (and flip the pieces if you have sliced it large) and add the spices - turmeric & garam masala.
    • Stir well again to coat the spices with the tofu mixture and stir fry the contents for another 2 minutes.
    • Finally add the soy sauce, let it slightly caramelize in the pan for few seconds, and then mix the soy sauce with the contents in the pan.
    • Stir fry the tofu & veggies in the spices & soy sauce mixture for another couple of minutes until the tofu is all slightly browned and it's well mixed with the sauce & spices.
