    Stir fried tofu egg scramble

    Stir fried tofu egg scramble is not vegan as we use eggs in this recipe. In many tofu recipes, tofu is used as a replacement for eggs, however, we use both tofu and eggs in this recipe.

    However, this is a vegetarian tofu egg scramble that is perfect for a high protein meatless breakfast recipe!

    The combination of tofu and eggs makes it a very protein rich, delicious, low carb and keto friendly breakfast or bruch (or lunch or light dinner) which is easy and quick to make too!

    Stir frying scrambled tofu and eggs is super easy and you just need to scramble the tofu and eggs separately first and then combine them to make this delicious easy dish.

    What kind of tofu is best for tofu scramble?

    I like to use extra firm tofu to make tofu scramble. However, you can also any tofu of your preference, like firm tofu.

    How to make tofu egg scramble for breakfast?

    To make tofu egg scramble, we use the following ingredients.

    extra firm tofu 14 oz

    salt adjust to taste

    eggs 2 large

    oil 1 tablespoon

    dried minced onions 1 tablespoon

    garlic powder 1 teaspoon

    black pepper powder ½ teaspoon

    turmeric powder ½ teaspoon (optional)

    curry leaves or fresh cilantro a few (optional) - or use dried parsley leaves

    Step by step instructions

    Drain the water from toful block and place the tofu in a large skillet or frying pan.

    Using a good quality spatula, break the tofu block so as to make scrambled tofu.

    Once the tofu is srambled, add salt and turmeric, stir well and cook in medium heat until the water is evaporated.

    Stir fry the scrambled tofu for another 2 to 3 minutes until the tofu is lightly browned and cooked to your liking. If using curry leaves or cilantro or parsley, add this too and mix well. Keep this prepared tofu scramble aside.

    To prepare the eggs, whisk the eggs in a bowl, add the dried minced onions and also little salt and stir the mixture well.

    Heat a different frying pan which is large in size (because we will add the scrambled tofu also to this pan later) and add the egg mixture (make sure to grease the pan with oil or butter if necessary).

    Let it cook for a couple of minutes in low heat, until the mixture begins to set.

    Using a good spatula, gently scramble the eggs.

    If you prefer soft eggs, you can add tofu to the scrambled eggs at this point or if you want to brown the eggs a bit, you may cook for another one more minute or so until you get the right consistency for your scrambled eggs.

    To make scrambled tofu with eggs:

    Add the prepared tofu scramble to the scrambled eggs and stir well to combine.

    If you do not want to add all the scrambled tofu, you may add the amount of tofu based on your preference and store the remaining for later use to make more tofu scrambled eggs or other dishes as you like.

    Also add the garlic powder, black pepper powder and oil to the tofu egg scramble, mix again so the seasoning is evenly mixed with the dish.

    Stir fry the scrambled tofu and eggs for a couple of minutes until the flavors are well blended.

    I prefer the scrambled tofu and eggs to be a little browned, so if you also like that texture, you can stir fry a bit more for the lightly browned texture.

    Once it is done, transfer to serving dishes and enjoy it while it's still hot for the best results!
