This easy, quick and delicious homemade tofu scramble seasoning is prepared using simple spices and herbs and you can quickly make this delicious scrambled tofu side dish for any meal, even if you are new to cooking tofu.
Homemade tofu scramble seasoning:
In this homemade tofu scramble seasoning, I only made a small quantity of seasoning which is used to season two blocks of tofu (about 28 oz tofu) in total.
If you want to make extra seasoning and store for later usage, you can double or triple the recipe and make the seasoning for more amount of tofu.
If you make more quantity of seasoning and want to store it, you can just easily store the seasoning in dry, air tight glass jars in a cool dry place for upto few weeks until the spices will stay fresh.
Always make sure to use fresh spices and also check the individual expiration dates for spices used to make the seasoning to make sure you are not storing the seasoning beyond the recommended time, so you can always enjoy fresh scrambledand seasoned tofu!

How to make tofu scramble seasoning & scrambled tofu?
To make tofu scramble seasoning and scrambled tofu, we use the following ingredients.

for the seasoning:
garlic powder 2 teaspoons
onion powder 1 teaspoon
black pepper powder ½ teaspoon
paprika ½ teaspoon
turmeric ¾ teaspoon
dried parsley leaves 1 teaspoon (more for garnishing if desired)
dried oregano ½ teaspoon
dried basil ½ teaspoon
salt 1 teaspoon (adjust to taste)
Optional ingredients:
italian seasoning 1 teaspoon
dried red chili flakes ½ teaspoon (adjust to preference)
for scrambled tofu:
extra firm tofu 28 oz ( I used two 14 oz blocks of tofu)
salt adjust to taste
oil 2 tablespoons
dried minced onions 2 tablespoons (optional)
curry leaves a few (optional, for more flavor and garnishing)
Step by step instructions
to make tofu scramble seasoning:
Add all ingredients to make the seasoning to a bowl and mix well and keep this ready while we prepare the tofu scramble.
to make tofu scramble:
Drain the water from the tofu packages and place the tofu blocks in a large skillet or frying pan.
Using a long spatula, you can break the tofu into pieces.
Turn on the heat and cook the tofu in medium heat so any remaining water left in the tofu will get evaporated.
Once the remaining water is almost evaporated, add the tofu scramble seasoning that we prepared and also more salt as needed (we also have some salt added to the seasoning), and mix well with the scrambled tofu and continue to cook.
Once the water is all evaporated, add oil and dried minced onions, mix well with tofu scramble and stir fry the scrambled tofu for a couple of minutes so the tofu starts browning.
Add more dried parsley leaves and also curry leaves (if using) for garnishng and for more flavor.
Once the tofu is done, turn off the heat and enjoy the tofu scramble along with other side dishes like roasted vegetables, corn or any side disheas you like or use it as a delicious filling for taocs, sandwiches etc!
