This easy egg fried rice with vegetables uses frozen mixed vegetables which makes things so easy and you can make this even if you do not have leftover rice at home. I used long grain white basmati rice to make this egg fried rice wth vegetables which is kind of a chinese Indian street style or restaurant style egg fried rice with veggies which is delicious.
Its also referred to as Indo Chinese egg fried rice with veggies which is very popular in India.
Usually fried rice recipes uses already cooked rice which is further stir fried in a mixture of eggs and veggies, along with soy sauce.
I also have this recipe for simple egg fried rice without soy sauce or vegetables, which is even more simpler but very delicious and kid friendly fried rice as well.
This easy egg fried rice is also made without a wok (using a pan) just like the above recipe for simple egg fried rice without soy sauce where I used an iron skillet to make the egg fried rice.
It’s great if you can use a wok, but even if you do not have wok, you can easily make egg fried rice in a good quality skillet or pan which is large enough to hold the cooked fried rice.
Coming back to this eas egg fried rice with vegetables (I used frozen veggies), I wanted to make some kind of rice with eggs and I also wanted to add some veggies to it to make it a complete filling meal. And egg fried rice with vegetables popped into my mind.
However, I didn’t have any already cooked rice to make the egg fried rice, so I thought I would try making the egg fried rice from scratch without using already cooked rice.
How To Add Eggs To Fried Rice?
If you wonder how to add eggs to fried rice for the perfect egg fried rice or when to add the eggs to the fried rice or how to make or cook scrambled eggs for fried rice, know that you can actually do this in different ways as there are different methods to make a delicious fried rice.
In most fried rice recipes, you scramble the eggs in a wok or pan (if veggies are also added, you may need to cook them separately or in advance before scrambling the eggs unlike this recipe where we add the vegetables later because we cook them along with the rice) and once the eggs are scrambled, you add the cooked rice to the scrambled egg mixture and then add soy sauce to this and stir fry for a couple of minutes.
In this method, when you use cooked rice to make the fried rice (which is the most popular way of making fried rice), it is best to stir fry the vegetables first (if using), then add the egg mixture (well whisked eggs unlike the recipe here), cook and scramble the eggs and then add in the rice and soy sauce and stir fry to make the fried rice.
However, this easy egg fried rice recipe is different, and it is a simple fried rice recipe where we cook the whole dish in a single pan, and I also cooked the rice in the same pan along with vegetables and eggs (since I didn’t have cooked rice), to make this easy and delicious egg fried rice.
So this is a different easy way to make the egg fried rice and its easy and delicious!
If you wonder if the scrambled eggs will become soggy once you add water to cook the rice, I want to confirm you that no it won’t become soggy rather the rice is more delicious since we cook the rice in the egg vegetable mixture.
So this egg fried rice recipe is an easy way to make the fried rice if you don’t have already cooked rice.
However, if you are still not convinced, you can always scramble the eggs in a different pan, or wok or skillet and add it to the cooked rice vegetable mixture.
Or you can just use a couple of eggs in the pan of rice and cook the rice with the eggs and then scramble the remaining eggs separately.
That’s why I told we can make the egg fried rice in different ways and depending on the situtation and recipe you follow, you can choose whichever method works for you the best.
So this is how I did it in this easy egg fried rice recipe.
I first scrambled the eggs in a little oil, then threw in the frozen veggies and sauteed a bit, then added garlic and salt and finally added the raw rice.
Once I stir in the rice to the egg vegetables mixture, I also added a little butter and little more salt for the rice and stir fried the rice along with the scrambled eggs and veggies for a couple of minutes.
Then I added enough water and cooked the rice and once the rice is cooked completely, I also added soy sauce, a little more oil and some dried broken red chilies and stir fried the contents for a couple of minutes more in medium to high heat.
The fried rice was delicious and it was a quick, simple, easy and delicious dinner my whole family enjoyed (kids included).
I didn’t have spring onions at home, so I couldn’t but I highly recommend adding a little chopped spring onions while you saute the veggies and also add a little more once you have prepared the fried rice since its so delicious adding them.
Though I didn’t add the spring onions in my fried rice since I didn’t have them when I was shooting the recipe, I will include it in the ingredients list in the recipe since its really good to have them in the fried rice.
However, if you also do not have it at home, just try the fried rice without the spring onions and its still very delicious.
Can You Use Basmati Rice For Fried Rice?
As I told above, I used long grain white basmati rice and yes, it works very well for this Indian style fried rice!
But jasmine rice or thai rice will be even nicer if you prefer to use them.
However if you use a different kind of rice like jasmine rice make sure to adjust the amount of water if needed and also adjust the time for cooking the jasmine rice perfectly.
What Vegetables Go In Fried Rice?
I used frozen vegetables in this recipe, but you can use either frozen or fresh vegetables that are chopped small. I used a mix of chopped green beans, green peas and carrots along with a little corn kernels which was also frozen.
You may also cut the carrots into thin and long slices, but I used cubes ones which was also good.
Other kind of veggies that goes great for this egg fried rice include onions, cabbage (slice long and thin), cauliflower florets, broccoli florets, sliced bell peppers (capsicum) etc.
Fried Rice Seasoning Mix From Scratch
I didn’t have any fried rice seasoning that I bought, so I used a mix of garlic powder and black pepper powder to make homemade seasoning for this easy egg fried rice.
The combination of garlic powder and black pepper powder with sesame oil, butter and eggs is simple and perfect for a homemade fried rice seasoning.
However, you may also add more spices like onion powder, paprika etc if you want to add more flavor to your fried rice.
Why This Recipe Works?
Though we do not have already cooked rice, this recipe works because we stir fry the rice before cooking the rice along with the other ingredients and also we stir fry the rice and other ingredients once the rice is cooked completely.
And it works and its totally delicious!
So make sure you do not skip the stir frying part of rice and other ingredients before cooking the rice as well as the stir frying part once the rice is cooked, for the perfect texture of fried rice.
How To Make Easy Egg Fried Rice With Vegetables
To make the easy egg fried rice, we use the following ingredients.
Ingredients for easy egg fried rice
white basmati rice 1 cup
oil 2 tablespoons
butter 1 tablespoon
garlic powder 2 teaspoons
black pepper powder 2 teaspoons
mixed vegetables chopped 2 cups ( I used a frozen veggie mix of chopped carrots, green beans and green peas)
soy sauce 2 tablespoons
dry red chilies broken 4 to 5 (optional)
spring onions chopped 2 tablespoons
water 2.5 cups
salt as needed
Steps To Follow (The Process)
First you need to scramble the eggs a little. To do this, heat one tablespoon of oil (preferrably sesame oil or you can use canola oil) in a medium sized pan and crack the eggs into the pan.
You can add a little salt for the egga and also add one tablespoon of black pepper powder. Cook the eggs for about 1 to 2 minutes until the eggs are slightly set.
Gently scramble the eggs, but do not make them very small pieces and cook for another one more minute.
Add the chopped vegetables (including one tablespoon of spring onions) and cook for anouther 2 to 3 minutes until you get a scrambled mixture of eggs and veggies.
Add some butter and also the rice, stir in and add enough salt and garlic powder and also the remianing one teaspoon of black pepper powder, mix everything well and stir fry the rice for another 2 minutes.
Add the water, mix everything well and bring the mixture to a boil.
Once the mixture begins to boil, reduce the heat to very low and cook for about 12 minutes.
Once the rice is cooked completely, open the pan, mix well (if ts not cooked completely you may cook for a couple of minutes more) and the soy sauce, remaining one tablespoon of oil and also the dry red chlies.
Mix everything well, add the broken red chilies (if using) and stir fry the contents for another couple of minutes in medium to high heat. Garnish with remaining one tablespoon of spring onions, serve hot!
Can You Make This Egg Fried Rice Without Soy Sauce?
Soy sauce really add the flavor for this egg fried rice, but you may also use good quality coconut aminos for the same results.
Also when you use soy sauce, make sure to use a good quality one like the traditionally brewed soy sauce for best results.
If you do not care for the flavor that soy sauce imparts, you can still make delicious fried rice without soy sauce, just I like I made this simple fried rice without soy sauce.

Easy Egg Fried Rice With Vegetables (Without Cooked Rice)
- 1 cup white basmati rice
- 6 eggs
- 2 tablespoons oil sesame oil or any neutral oil like canola
- 1 tablespoon butter
- 2.5 cups water
- salt as needed
- 2 cups mixed vegetables chopped I used a mix of carrots, green beans and green peas which was frozen
- ½ cup corn kernels (I used frozen corn kernels)
- 2 teaspoons garlic powder
- 2 teaspoons black pepper powder
- 2 tablespoons soy sauce
- 4 dry red chilies broken (this ingredient is optional)
- 2 tablespoons spring onions chopped
- Heat one tablespoon of oil in a medium sized pan and add the eggs.
- Add little salt and one tablespoon of black pepper powder and cook for about 1 to 2 minutes until the eggs are slightly set.
- Gently scramble the eggs, but do not make them very small pieces and cook for one more minute so you get almost cooked scrambled eggs.
- Add the chopped vegetables and also one tablespoon of spring onions and cook for anouther 2 to 3 minutes until you get a scrambled mixture of eggs and veggies.
- Add the rice and butter, stir in and add the garlic powder and also the remianing one teaspoon of black pepper powder and enough salt for the rice, mix everything well and stir fry the rice for another 2 minutes.
- Add the water, mix everything well (make sure the rice is barely covered in water, if its sticking out you may add little more water) and bring the mixture to a boil.
- Once the mixture begins to boil, reduce the heat to very low and cook for about 10 to 12 minutes until the rice is cooked completely.
- Once the rice is cooked completely, open the pan, mix well (if ts not cooked completely you may cook for a couple of minutes more) and the soy sauce, remaining one tablespoon of oil and also the dry red chlies (if using)
- Mix everything well, add the dry red chilies which is broken (if using) and stir fry the contents for another couple of minutes in medium to high heat until all liquid is evaporated and the rice is stir fried nicely. Garnish with remaining one tablespoon of spring onions, serve hot!
