I only took about 15 miutes of total time to make this homemade dessert from scratch, and that includes the boiling time for milk as well!

what is vermicelli pudding?
Vermicelli pudding is a creamy, sweet pudding made using vermicelli noodles. We use roasted vermicelli noodles that are broken in small pieces to make this yummy vermicelli pudding. Vermicelli noodles is usually made of durum semolina flour.
In India, we use this type of roasted, broken vermicelli noodles to make kheer or payasam, upma etc. Vermicelli kheer or semiya payasam using vermicelli noodles is much like this vermicelli pudding, the only difference is that we usually add nuts & raisins to the kheer and also we use cardamom powder to flavor the kheer. Ghee is also usually added to make payasam or Indian style kheer, to add more flavor. However, in this recipe for vermicelli pudding, we do not use any nuts or ghee and it is made using just 3 ingredients to make it a super easy dessert that you can quickly prepare at home!
is vermicelli pudding gluten free?
No, the vermicelli noodles that we use in this recipe is not gluten free and so the vermicelli pudding is not gluten free either.
Vermicelli noodles that we use to make the pudding is made of semolina flour and hence contains wheat. So the vermicelli that we use here is not really gluten free, but there may be other varieties of gluten free noodles like rice vermicelli noodles which could be gluten free, but they are used in other recipes and may not be suitable for this recipe.

We use the following ingredients to make easy and delicious vermicelli pudding at home.

- roasted vermicelli 1 cup
- milk 4 cups (will need more chilled milk later)
- sweetened condensed milk 14 oz
step by step instructions
- Add the four cups of milk to a heavy bottomed saucepan (use a large sized saucepan) and bring the milk to a boil.
- Stir in between to make sure the milk is not getting burnt at the bottom of the pan.
- Once the milk starts boiling, add the roasted vermicelli also to the pan and mix well.
- The vermicelli will form clusters if you do not mix them in, so make sure to stir them in well with the milk.
- Bring the vermicelli milk mixture to a boil (this starts boiling soon since the milk is already boiled and hot).
- Once the mixture begins to boil, reduce the heat to medium and cook the vermicelli until it's cooked.
- This takes around 3 to 4 minutes time for regular vermicelli. If the vermicelli that you use is fine variety, it will cook faster so make sure to keep watching!
- Also make sure to keep stirring so the mixture won't burn.
- Once it's done, switch off the stove, add the sweetened condensed milk, mix in with the cooked vermicelli milk mixture.
- Also add more chilled milk (about 2 cups is what I use) to the vermicelli pudding to adjust the consistency of the pudding to your preference.

- You may serve this warm or you can cool this down to room temperature and chill in the refrigerator to serve it cold!
- Once cooled, you can also add chopped nuts like almonds, cashews, pistachios etc or you can add fresh fruits like sliced strawberries, bananas etc to make it more delicious.
- You may also add a little cinnamon powder or cardamom powder (about ¼ teaspoon) to the pudding while you make the pudding, to make it even more delicious and flavorful.

Since this is a milk based dessert, it can spoil if you leave this in warm conditions for long. The best thing to do is to cool this down to room temperature and then save the pudding in the refrigerator. The pudding tastes the best when it's served chilled. Just before serving, you can take the pudding out of the refrigerator. You can store this in airtight food containers for 2 to 3 days in the refrigerator, so it stays fresh. You can also add sliced fresh fruits like strawberries, mangoes, peaches etc as you like for a delicious twist in the recipe. Adding fresh fruits just before serving also helps to give more flavors. You can also serve this pudding along with a bowl of fresh fruits (chilled works the best) served separately, so anyone who want fruits can add them to their pudding!
