Cake mix banana muffins using yellow cake mix, leftover ripe bananas (we use 3 ripe bananas in this recipe) and butter makes easy, delicious and moist (large sized or oversized, giant) yellow banana cake muffins that's perfect for breakfast, snack or even dessert as these muffins taste almost like banana cake! We just use 3 ingredients to make these cake mix banana muffins and it's a great recipe to use any leftover ripe bananas or leftover cake mix from the holidays!


Though we only use 3 ingredients to make these cake mix banana muffins, you can make them even more flavorful byadding things like vanilla extract, cinnamon powder etc!

You can even add 1 cup semi sweet chocolate chips to the batter or even few blueberries if you want them to have even more flavors! However, they taste great with just bananas and the texture and taste is similar to that of banana cake or sweet banana bread. yellow cake mix 15.25 oz (I used Duncan Hines cake mix)
bananas 3 large
melted butter ½ cup (or oil)
optional ingredient:
vanilla extract 1 teaspoon

step by step instructions to make yellow cake mix banana muffins
Step 1 - Preheat oven to 350 degree Fahrenheit.
Step 2 - Place the yellow cake mix in a large bowl.

Step 3 - Add the bananas also the bowl, mash the bananas, small chunks of bananas are totally fine!


Step 4 - Add melted butter (or oil) and vanilla extract (if using), mix everything together until the ingredients are evenly combined.



Step 5 - Pour spoonfuls of batter on to prepared muffin moulds, bake in the preheated oven for about 18 minutes. Then, increase the heat to 375 degree Fahreanheit and bake for another 12 to 15 minutes ( about 30 to 35 minutes baking in total) until a toothpick inserted at the center of the muffins come out cleaner so you know the muffins are fully cooked on the inside!


Step 6 - In case the top gets browned before the inside is completely cooked, you can loosely cover the top of the muffin pan using an aluminium foil and bake which will prevent the further browning of the top, while the inside will continue to cook. However, if you do this, make sure to remove the foil for the last couple of minutes of baking so the top won't look soggy!

Step 7 - Once the muffins are fully baked, transfer the muffin pan to a cool place. Allow the muffins to cool down for a few minutes, serve them while they are still warm for the best results! Serve the delicious cake mix banana muffins with a cup of milk or tea or coffee as you wish!


As I said earlier, these muffins are large oversized muffins that spread out of the muffin moulds as they bake! If you want to bake the muffins that are smaller in size, you can do that in two different batches by pouring little less batter to the muffin moulds and that will reduce the baking time for each batch of muffins as well!
