You can use white basmati rice as a substitute for white jasmine rice to make the pilaf or pulao. White basmati rice is a very popular aromatic long grain rice from India. If you use white basmati rice, you will need to adjust the amount of water since the water to rice ratio can be slightly different, if you want to make the perfect rice pilaf.

In this rice & potato pilaf, I have used russet potatoes.
You may also use other potatoes like yukon gold potatoes (yellow potatoes), red potatoes etc as you like. Just make sure to use medium sized potatoes or if you are using large sized potatoes you can reduce the number of potatoes used or if you are using small sized potatoes you can increase the number of potatoes use in the recipe.

To make easy, simple and delicious white rice potato pilaf, we use the following ingredients.

- white jasmine rice 2 cups
- potatoes 4 medium sized (I used russet potatoes) -- peeled and sliced in medium sized cubes
- onions 2 large -- peeled and sliced in slightly thick and long slices
- butter 4 tablespoons
- salt adjust to taste
- garlic powder 1 teaspoon (or use 2 to 3 cloves of fresh garlic minced)
- vegetable broth or water 3 cups
- cinnamon sticks 2 (optional)
- bay leaves 2 (optional)
step by step instructions to rice & potato pilaf
- Add one tablespoon of butter to instant pot, press saute and as the butter melts, add the jasmine rice and lightly fry for about a minute (stir to make sure the rice doesn't stick to the bottom of the pot). Also add the cinnamon sticks and bay leaves, if using, and lightly fry them along with the rice which will give more flavor and fragrance to the rice.
- Add sliced onions and cook for another one minute until the onion begins to soften.
- Add the potato cubes and garlic also to the instant pot and saute for few seconds.
- Add the salt and broth (or water). Make sure the rice is covered with broth (if not use a spoon or spatula to gently press down the rice so the rice is immersed in the liquid).
- Aso, if anything like rice is sticking to the pot, make sure to deglaze the pot by scraping using a wooden spoon once the broth or water is added, to avoid getting burn error while making the pilaf.
- Place the remaining butter on top, close the instant pot with lid in sealing position and cook in high pressure for 5 minutes.
- Once the cooking is done, wait for a natural pressure release of 12 minutes, then carefully and gradually do a manual pressure release to release any remaining pressure.
- Gently fluff the potato rice pilaf using a fork and serve the delicious rice along with any curry, dal, paneer, vegetables etc as you like!
- If you have added cinnamon sticks and bay leaves to the rice, you can discard them before serving the rice.
