- 8 medium sized red potatoes
- 2 tablespoons oil
- 2 teaspoons garlic powder
- 1 teaspoon ground black pepper powder
- salt as needed
- 2 teaspoons dried oregano leaves
- Wash the potatoes and boil the potatoes in a pan with enough water and salt, for about 20 to 25 minutes.
- After 25 minutes of boiling, drain the water and wait for the potatoes to cool down.
- Transfer the potatoes to a large bowl, add the oil and enough slat, mix well with the hands to coat all the potatoes with the oil and salt.
- Preheat oven to 400 degree Fahrenheit.
- Grease a large baking sheet with oil or line the sheet with non stick silicon mat or aluminium foil, arrange the potatoes in a single layer.
- Smash the potatoes gently using a potato smasher or a good quality spatula.
- Top all the smashed potatoes with garlic, enough salt and ground black pepper powder and other spices you may like.
- Bake in the preheated oven for about 30 minutes or until the potatoes are roasted.
- In case you want to top the potatoes with cheese (if not vegayou can add the grated cheese now and bake for another 5 more minutes.
