    roasted baby red potatoes

While I like the texture of potatoes without the skins in some recipes, like while I boil them and add to curry or stews (usually), the peels actually give a nice texture to these oven roasted red potatoes.

Just make sure to wash the potatoes very well so there is no dirt or soil residue in the skin.

You may also scrub the potatoes, if needed and then wash the potatoes very well.

However, if there's too much dirt that you don't like keeping the peels, feel free to peel the potatoes before baking them!

Also, if there's any sprouts or tiny growths in the potatoes (sometimes this happens when the potatoes sit in the kitchen counter for a while), make sure to cut them off before roasting the potatoes.
