Vegetable hakka noodles is very popular in Indian Chinese cuisine, however, this is not the authentic veg hakka noodles recipe.
This is an easy, spicy garlic curry noodles recipes that tastes delicious with added sweet peas, garlic, butter, sauces and spices and it is made in the instant pot pressure cooker to make it even more easier!
The reason why I used hakka noodles in this spicy garlic curry noodles recipe is because I had hakka noodles at home and the texture of this noodles is just amazing, you have to try it if you haven;t tried it before!
Curry noodles is more usually made with thai curry paste, coconut milk etc, but in this simple recipe for spicy curry noodles, I have used Indian spices like curry powder or garam masala & turmeric powder which works very well!
Also I have used Italian spices like oregano, basil powder etc which adds more flavors to the prepared noodles, but if you do not have them, you may skip them.

Spicy garlic chili buttered curry noodles
To make spicy garlic buttered curry noodles, we use spicy sauces like sweet chili sauce (which is a mix of sweet and spicy flavors, go fo mild sauce if you do not want it too spicy) in this recipe.
We use fresh garlic cloves that are minced or crushed to add the garlic flavor.
However, you may replace the fresh garlic with garlic powder (if you use garlic powder, we need less amount than fresh garlic) if you do not have fresh garlic or if you want it more quicker.
Also we use the curry powder (or garam masala powder), hot sauce or sriracha sauce and also black pepper powder and ginger which adds the spicy flavors!
To balance the spiciness, we also use little brown sugar, teriyaki sauce, soy sauce etc which adds mild flavors and balance the spicy flavors in the noodles.
You may adjust the amount of sauces as you prefer, based on your preference for spiciness or sweetness for the noodles.
Also, you may replace the sweet chili sauce with green chili sauce or you may replace the black pepper powder with white pepper or paprika or red chili powder based on your preference for spices.
What is hakka noodles?
Hakka noodles is a popular Chinese noodles and it's used in making popular vegetable hakka noodles in Indo Chinese cuisine, which is inspired from the Hakka cuisine.
The hakka noodles that we use in this recipe is ching's hakka noodles which comes as multiple noodles cakes or packets inside a single package of noodles.
It is available in many Asian stores including Indian grocery stores and you can buy this online too.
This is so popular in India with the right blend of vegetables & sauces.
As I mentioned early, this is not the same recipe for the popular veg hakka noodles, but it's a simple, delicious, spicy garlic curry noodles dish prepared with the hakka noodles, garlic, sauces, butter and spices as the main ingredients.
Hakka noodles vs Spaghetti - What is the difference?
Hakka noodles and spaghetti are both noodles but they are quite different in taste and texture.
The regular spaghetti noodles are thicker than hakka noodles though you can find thin varieties of spaghetti noodles as well.
Spaghetti noodles is easy to break so you can easily fit them in the instant pot pressure cooker, but I have found that breaking hakka noodles with hand is quite difficult.
This is because, hakka noodles comes in the form of cakes or clusters of noodles that stick together, which is hard to break before cooking.
Once cooked, they are perfect noodles just like spaghetti noodles though you can identify the taste difference in both the noodles.
How to make spicy garlic chili curry noodles in instant pot?
We use the following ingredients to make delicious, easy, spicy, garlic buttered noodles at home!

hakka noodles 300 grams (equivalent to about 10.5 oz, from two cakes of noodles from the packet - see notes)
water 4 cups (or use vegetable broth)
garlic 2 tablespoons minced or crushed (or use 2 teaspoons of garlic powder)
ginger peeled and grated or minced 1 teaspoon
onion powder 1 teaspoon
curry powder 1 tablespoon (or use garam masala powder)
turmeric powder ½ teaspoon
frozen peas 1 cup (may add little more)
butter 4 tablespoons
salt as needed
brown sugar 1 tablespoon
for the sauce:
tomato sauce 2 tablespoons
soy sauce 2 tablespoons
teriyaki sauce 1 tablespoon (optional)
sweet chili sauce 1 tablespoon
hot sauce 1 tablespoon
dried basil ½ teaspoon (optional)
oregano dried ½ teaspoon (optional)
black pepper powder 1 teaspoon (adjust the amount slightly to your preference)
Step by step instructions
Place the noodles in the instant pot.
Add the fresh garlic (or garlic powder), ginger, onion powder, curry powder (or garam masala powder), turmeric powder and also brown sugar & sprinkle enough salt.
Pour the water (or broth) on top of the noodles.
Add the frozen peas on top and also place the butter on top. Do not stir the noodles.
Close the instant pot with lid in sealing position and cook in high pressure for 1 minute.
Once the cooking is done, press "keep warm/cancel ' button and wait for a natural pressure release for about 8 minutes.
Once the 8 minutes of natural pressure release is over, carefully do a gradual, controlled manual pressure release to slowly remove the remaining pressure.
If you want a very al dente texture for noodles, you may do a controlled manual pressure release after 5 minutes of natural pressure release. The steam will be very hot at this point, so make sure to be very careful!
Once the pressure is all removed, carefully open the lid.
Stir the noodles gently, add the sauces and spices for sauce ( oregano and basil), stir to combine with the noodles.
Press saute and cook for another 1 to 2 minutes, gently tossing the noodles in between so the sauces will combine evenly across the noodles.
Press 'cancel' button to stop sauteeing and transfer the prepared noodles to a cooler place to avoid overcooking of the noodles.
Alternatively, instead of using the saute in instant pot, you may transfer the cooked noodles to a large skillet, wok or pan on stove top and add sauces, toss and stir fry the noodles to your liking.
You may also add little more butter or little heavy cream (about ¼ cup) or shredded cheese (about 1 cup) if you want the noodles to be in a more creamy sauce like in pasta.
Let the prepared noodles rest for few minutes so the noodles will soak the flavors from the sauce and spices.
Serve the delicious garlic buttered noodles with peas and sauce for a simple lunch or dinner!
Notes: Amount of hakka noodles I used in this recipe is 300 grams.
I had a large package of hakka noodles with 4 cakes of noodles equivalent to 600 grams of noodles.
I used only two cakes of noodles in this recipe, which is 300 grams of noodles and it is equivalent to about 10.5 oz of noodles. If the amount of noodles slightly varies also (upto about 12 oz of noodles), it should be fine.
I have only used a few ingredients to add flavor to this spicy garlic hakka noodles.
You may add more ingredients like chopped scallions or green onions, thinly sliced carrots, cabbage, peppers (capsicum), chilies etc to your preference.
Can you substitute hakka noodles with spaghetti noodles?
If you do not have hakka noodles, you may substitute hakka noodles with spaghetti noodles as well.
However, the cooking time for spaghetti noodles will be slightly different.
Hakka noodles is slighty thinner than spaghetti noodles and will cook faster than spaghetti noodles.
If using spaghetti noodles, you should break the noodles to fit inside the instant pot and you should increase the cooking time to 3 minutes instead of 1 minute.
You may use 5 cups of water for 12 oz spaghetti noodles and cook in high pressure for 3 minutes followed by a natural pressure release for 10 to 12 minutes, after which you can do a careful, gradual & controlled manual release to release any remaining pressure.
