They are super simple to make, and do not have any complicated ingredients in this. If you have leftover eggs or cheese, this is a good recipe to use up the leftover eggs and cheese.

how long to bake egg and cheese muffins in muffin tins?
These breakfast egg and cheese muffins took about 25 to 30 minutes time to completely bake, in a preheated oven at 350 degree Fahrenheit.
To make sure they are completely cooked inside, you can insert a toothpick which should come out pretty clean. The completely baked muffins have soft & fluffy texture inside.
If you want to save more time for a more quicker breakfast, you may bake them in mini muffin tins to make mini egg bite muffins. Egg bite muffins baked in mini muffin tins will bake faster, like about 15 minutes (always check to make sure they are baked).
When using mini muffin pans, you can make more servings of these muffins as well.
how to prevent breakfast egg & cheese muffins from sticking to muffin tins?
I used a silicon muffin tray to bake these egg and cheese muffins and they were so easy to pull out from teh muffin tin once they are done & cooled enough.
I recommend using good quality slicon muffin tins or use good quality non stick muffin tins so the chances of muffins sticking to the muffin tin are much lesser.
You may also use silicon liners in your muffin tin to help prevent the muffins sticking to the pan.
So here is how you can make this easy, cheesy breakfast egg bite muffins in a muffin pan!
How to make egg and cheese muffins for breakfast?
We use the following ingredients to make easy, delicious and cheesy breakfast egg bite muffins from scratch at home.

- eggs 6 large at room temperature
- mozzarella cheese shredded 1 cup
- salt adjust to taste (I only used about ¼ teaspoon)
- garlic powder ½ teaspoon
- onion powder ½ teaspoon
- black pepper powder ¼ teaspoon (optional)
step by step instructions
- Crack the eggs into a large bowl and whisk the eggs very well.
- Add salt, garlic powder, onion powder and also black pepper powder (if using) and mix well to combine with the egg mixture evenly.
- Add the shredded cheese also to the egg mixture, and mix well to combine.
To bake the egg bite muffins
- Preheat oven to 350 degree Fahrenheit.
- To bake the egg muffins, make sure to use non stick muffin pan or use a silicon muffin pan.
- I use a silicon muffin pan which is extremely easy to use, as the muffins won't stick to the pan and it's also easy to pull out the muffins once it's baked.
- Add the prepared egg mixture to the moulds in the muffin pan, fill only about half of the moulds with the egg cheese mixture.
- Because the egg muffins will rise as they bake, so you only need to fill about half of the moulds.
- Once ready, place the muffin pan in the preheated oven and bake for about 25 to 30 minutes or until the top is lightly golden brown in color and the inside is completely set and cooked.

how to store and reheat breakfast egg bites?
The best way to enjoy these delicious, cheesy muffins or egg bites is to enjoy them while they are freshly prepared and slightly warm.
As you keep them, these egg muffins may slightly collapse (though they rose pretty well for me & didn't collapse much either). This is because they are made without any flour & they are made without any rising agents like baking powder or baking soda.
The eggs in the muffins are what that help them to rise while we bake them, and as we keep them for more time, they may not hold up well. If you keep this outside in the room temperature for more than few hours, it's a good idea to refrigerate them in proper air tight containers so they stay fresh for longer time.
You may store this in the refrigerator for a couple of days if you store them properly. If you want to store these for longer, you may freeze the egg bites or muffins in freezer safe containers so they stay fresh for even more longer time.
To reheat the egg bites which were stored in the refrigerator, you can transfer them to microwave safe plates and heat for about 40 to 50 seconds time.
If you are freezing the egg & cheese breakfast muffins, you will need to heat them for little more time so they can be served warm as you need.
