Avocado egg toast sandwich is perfect for breakfast whether you use fried eggs, egg omelettes, scrambled eggs, boiled eggs or even poached eggs or steamed eggs! In this easy, delicious recipe for avocado egg toast sandwich, we make cheesy egg omelette which is used along with homemade avocado spread and cheese slices and toasted bread to make the perfect, easy avocado egg toast!
In fact, avocado egg toast sandwich can be made in many different ways.
Instead of using egg omelettes, you can use fried eggs (which is very popular way) and you can make your fried eggs your way whether you like over easy eggs, over medium eggs or over hard eggs! You may also try basted eggs or poached eggs instead! You can also use sliced boiled eggs or steamed eggs! However, in this recipe, we are using a delicious cheesy egg omelette for the sandwich. Also, you can use fresh avocados instead of avocado spreads in the toast. You may use a combination of fresh seasoned avocado slices, avocado spread or even guacamole to use as the spread here (I actually used the same seasonings that I use for my simple guacamole recipe but you can use your homemade guacamole with other seasonings and ingredients or use store bought guacamole or avocado spread as well)!
Basically there are 4 steps of making this easy, delicious avocado egg toast sandwich with cheesy egg omelette.
1st step: preparing the eggs (in this recipe, that means making cheesy egg omelette)
Making cheesy egg omelette is easy, just follow the step by step instructions in the recipe to make easy, delicious and cheesy omelette for the sandwich. We also add extra cheese whole assembling the sandwich.
2nd step: toasting bread
You can toast the bread in toaster or if you don't have a toaster, you can simply toast the bread on stove top using an iron skillet or a good quality non stick pan. 3rd step: making avocado spread
Making avocado spread at home is super easy, as you just need to prepare the avocados by peeling, discard the pit and then slightly mash the avocados. Then add simple seasonings like salt, pepper and more based on your preferences. You may also use simple guacamole spread that you make at home or you can use store bought guacamole spread as well!
4th step: assembling the sandwich
Assembling the sandwich is easy, once you have prepared the egg omelette, avocado spread and toasted the bread! Just follow the step by step instructions in the recipe to easily assemble the avocado egg sandwich! In this recipe, I just used a simple, seasoned avocaod spread which you can quickly make using fresh, ripe avocados.

To make easy, delicious cheesy avocado toast with egg omelette, we use the following ingredients.

for the cheesy egg omelette:
- eggs 5 large
- shredded cheese 1 cup (I used Mexican blend, you may use cheddar or your favorite cheese for omelette)
- salt a pinch
- garlic powder ½ teaspoon
- butter or oil 1 tablespoon
for the avocado spread:
- avocados 2 ripe
- garlic powder 1 teaspoon
- olive oil 1 teaspoon
- lemon juice 1 tablespoon
- salt a pinch (optional)
for the sandwich:
- bread slices 6
- cheese slices 4 (you may use pepper jack slices or Kraft slices or any cheese slice you like on sandwiches or you can use shredded cheese)
- black pepper ¼ teaspoon or as preferred (optional)

Preparing cheesy egg omelette:
- Crack the eggs in to a large bowl, add salt, garlic and mix well to combine. Whisk the eggs very well so the yolks and whites are combined.
- Add the shredded cheese to the beaten egg mixture, stir well to combine evenly.
- Heat a large non stick pan or skillet, add the butter (or oil) and pour the egg mixture carefully so it's evenly spread.
- Cook the egg omelette for about 2 to 3 minutes until it's set at the bottom, then carefully flip the omelette. In case if it breaks while you flip, it is still fine!
- Cook the other side too, for another 1 to 2 minutes so the omelette is ready.
- Carefully transfer the prepared omelette to a serving plate, using a spatula.
Toast the bread:
- Toast the bread slices in a toaster or you can toast the bread without toaster as well, or easily toast the bread slices in the oven!
Preparing the avocado spread:
- Peel the avocados, discard the pits and slice roughly. Place the slices in a large bowl.
- Add the seasonings (here I used garlic powder, olive oil, lemon juice and little salt).
- Mash the avocados to make the spread, using a potato masher. Stir well using a spoon so the seasonings are evenly combined in the avocado spread.
- Now, you have to assemble the sandwich immediately, or the avocado spread may turn slightly brown if kept in room temperature for longer time.
- Assembling the avocado toast sandwich with cheesy egg omelet:
- Place three slices of toasted bread in a serving plate.
- Generously spread the avocado spread on the first two slices of bread.
- Divide the egg omelette in four equal pieces and place egg omelete slices on both bread slices.
- Place cheese slices on top of each bread slice. If you are using shredded cheese, use about 2 tablespoons of shredded cheese (Mexican blend or any of your preferred cheese) on each slice of bread.
- Sprinkle with black pepper powder (or any seasonings) on top of the slices and place the second bread slice on top of the fist bread slice.
- Place the third toasted bread on top (if you wish, you may also apply the avocado spread on one side or both sides of the third bread slice for extra flavor!).
- If you want to melt the cheese, you can slightly heat the sandwich in medum heat on an iron skillet or non stick pan or you can place the sandwich on a microwave safe plate and microwave the sandwich for about 30 seconds!
- Similarly prepare another avocado egg sandwich using the other three bread slices and remaining ingredients.
- Slice the sandwiches in halves, diagonally, so you will have 4 servings of sandwiches!
- If you do not mind the calories, you may enjoy the sandwiches without slicing as well (the pictures were taken before slicing the sandwiches).
- Enjoy the avocado egg sandwiches immediately for best results, or the avocado spread may turn slightly brown and lose it's freshness as it's kept longer in room temperature.
If there is any leftovers from the prepared avocado spread, make sure to store it in the refrigerator in air tight food containers where it stays fresh for another couple of days! (it's normal for avocado spread to turn slighlt brown even when you keep in refrigerator. Just give a good stir before you use, if it looks slightly brown!).
