They are the best, soft rainbow colored m&m sugar cookies that are eggless too.
So even if you don't have eggs at home, you can make these delicious soft & chewy m&m cookies without eggs.
The texture of the m&m cookies is very moist, soft and tender but chewy on the inside, with slightly cripy on the outside along the edges.
If you prefer very soft cookies that are not crisp at all, you can just bake them for the minimum time required, that is 10 minutes.
If you want them slightly crispy, bake them for 12 minutes, and for more crispy m&m sugar cookies, bake them for 14 minutes.
As you increase the baking time, the cookies become more crispier.
However, do not increase the baking time a lot, as they may become harder if you bake them for a longer time resulting in overbaked cookies.
I like to bake them for just 12 minutes, which is the perfect texture for my preference!
To make eggless m&m sugar cookies, we use the following ingredients.
1.5 cups bleached all purpose flour may use unbleached all purpose flour too
1 teaspoon baking powder
Β½ teaspoon salt
2 tablespoons dry milk powder
Β½ cup oil
ΒΎ cup sugar
ΒΌ cup milk
1 teaspoon vanilla extract
Β½ cup m&m candies
Step By Step Process
In a bowl mix all the dry ingredients together - flour, baking powder, salt and dry milk powder until everything is combined evenly.
In another bowl, mix well the oil and sugar until sugar is dissolved. Then add the milk and vanilla extract also, stir well to combine with the oil sugar mixture.
Slowly pour the wet ingredients mixture to the dry ingredients mixture, using a spoon, mix together to form a crumbly mixture.
Now add the m&m candies to the crumbly flour mixture.
Using your hands, knead well to form the cookie dough. The dough shouldn't be dry, it should be slightly moist so it can hold the m&m candies in it.
As you can see, the m&m sugar cookie dough with oil is quite moist and it helps to hold the candies inside the dough.
Refrigerate the m&m sugar cookie dough for about 20 to 30 minutes.
Once refrigerated for about 20 to 30 minutes, take the cookie dough out from the refrigerator and let's begin the process of making the delicious eggless m&m sugar cookies.
To make the cookies
Preheat oven to 350 degree Fahrenheit.
Line two baking sheets with parchment paper.
Make small balls out of cookie dough and gently press with your palm (do not press a lot because the cookies will spread further).
Place the cookie dough ball in the cookie sheet.
Similarly make balls out of the remaining cookie dough and place them all in the prepared cookies sheets.
Make sure to leave a 2" space in between the cookie dough balls, otherwise the cookies may stick to each other as they spread (if you have only one cookie sheet, you can bake these in two different batches also).
If you have time, place the cookie sheet in the refrigerator for another 10 to 15 minutes for the best results. If not, its okay you can bake this immediately too.
Place the cookie sheet in the preheated oven and bake the cookies for 10 to 12 minutes until the edges are starting to turn slightly brown.
For very soft cookies, you can bake just 10 minutes and for soft but slightly crispy cookies, bake for 12 to 14 minutes depending on how crispy you want the m&m sugar cookies for your taste.
Allow the cookies to cool down completely before you serve them.
The cookies will be too soft immediately after they are baked, but once they are cooled completely, they will be soft & chewy and perfect in texture!
You can enjoy the m&m cookies as they are for dessert as they are very delicious on their own!
However, for the best taste, serve them with a cup of cold milk or hot tea or coffee as you please.
If they are not served on the same day of preparation, transfer the cookies to cookie jars or air tight food containers and keep refrigerated for another 3 to 4 days more.
As you keep them refrigerated, the cookies may slightly harden, but you can easily microwave them for a few seconds to soften them before serving (do not microwave for a long time though).
For about 6 to 8 cookies, you may microwave for about 30 seconds.
You need to adjust the microwave time depending on your microwave and how cold your cookies are.

Can you make these without milk powder?
Yes, you may make these eggless m&m sugar cookies without milk powder if you do not have milk powder at home.
Using milk powder in the dough, adds it more flavor and makes the cookies more delicious and rich.
However, if you do not have dry milk powder, you can skip it and the cookies will still be very delicious.
Can you make them with butter?
In this m&m sugar cookie recipe, I used oil instead of butter.
That is because, I found oil helps to keep the cookie dough more moist and easy to knead while adding the m&m candies.
It helps to keep the candies in place easily without much effort.
Using butter will add more flavor than oil and makes the cookies even more delicious. However, make sure to use melted butter (at room temperature) if you want to use butter instead of oil.
You might need to knead the dough a little more while using butter and in any case, if you feel the dough is little dry or if the candies are not falling off the dough, you may add a little more oil or melted butter (about a tablespoon at a time) and knead again.
Make sure not to overly knead though, since that may cause the candies to start melting fast.

Kyra
I made these because I was out of eggs and wanted m and m cookies but didn't wanna go to the store. I added a little extra liquid milk in replace of the dry milk with the oil sugar mixture. I also used coconut oil because it's my favorite, keeps food moist longer! This recipe though was phenomenal and I've already eaten a bunch π
