    Red velvet cake pancakes using boxed cake mix makes easy, colorful red velvet pancakes perfect for Valentine's Day breakfast or brunch or any special occasion like weddings, anniversary, birthdays, baby shower, bridal shower etc!

    If you have red velvet cake mix, it's super easy to make red velvet pancakes that looks so decorative with bright red color and you can enjoy them with pure fresh maple syrup and sliced strawberries (which is the best combination in my opinion) or add cream cheese frosting, chocolate icing or chocolate syrup or any icing as you like! You can als add more fresh fruits like raspeberries, blueberries, sliced bananas etc and you may add butter, fruit jam, whipped heavy cream, honey etc based on your preferences!

    Basically the red velvet cake mix is meant to make red velvet cake, but we are using it to make easy red velvet pancakes so it's great to be mindful about certain things for the best results!

    Red velvet pancakes (or cakes or any red velvet desserts) are known for their bright, red color and it's important to retain the red color in the pancakes, as that's what makes the pancakes really special! You don't want to end up with burnt looking red velvet pancakes, as you want that bright red color look! This is kind of tricky with red velvet pancakes (unlike regular pancakes) because, with regular pancakes it's normal to see golden brown patches on the surface of pancakes which actually shows they are well done and they look great as well. However, if your red velvet pancakes develop those golden brown patches while getting cooked in the pan, that kind of look like burnt pancakes, undermining the beauty of the bright red color pancakes and that won't look good and I am pretty sure that's not how you will want your red velvet pancakes to look (though they will taste great as usual). Since we want the best possible bright red color for the red velvet pancakes, we need to pay attention to certain things while making the pancakes.

    1 - Make sure the pan is not too hot and make sure to cook the pancakes in low to medium heat. Yes, this means the pancakes will taker longer than usual to cook, but if you use high heat (or even something more than medium heat) the surface of the pancakes can quickly burn before the interior is completely cooked and that can ruin the look of the pancakes. So it is important to make sure the pan is not too hot and keep the heat somewhere from low to medium while cooking the pancakes and take that extra few minutes to cook them, to achieve the best results!

    2 - Use a lid to cover the pan while cooking the pancakes

    3 - Use a toothpick to insert at the center of the pancakes to make sure they are fully cooked

    butter ½ cup melted (more for greasing the pan while making pancakes)

    vanilla extract 1 teaspoon

    step by step instructions to make red velvet pancakes with cake mix:

    Step 1 - Place the red velvet cake mix in a large mixing bowl.

    Step 2 - Beat eggs in a different bowl. Add melted butter and sugar also to the beaten eggs, mix everything together.

    Step 3 - Now also add the milk and vanilla extract to the egg butter sugar mixture, mix well to combine.

    Step 4 - Add the prepared wet ingredients mixture to the dry cake mix mixture in the other bowl. Stir everything well so the ingredients are evenly combined and mixed well to form the pancake batter. Make sure there's no dry flour left at the bottom of the bowl.

    To make red velvet cake mix pancakes:

    Step 5 - Melt a little butter (about 1 teaspoon) in a large pan and add a small ladle full of batter (about 2 tablespoons).

    Step 6 - Let the pancake cook for about 2 to 3 minutes in low heat (in high heat the red color can change and that may not look good!). Cover with a lid to make the process more faster (it's important to cook red velvet pancakes in lower heat than normal, though this means more cooking time since we want to retain the bright red color of the pancakes!).

    Step 7 - Once the pancakes are cooked on one side, gently flip the pancake and cook the other side as well in low heat. You may also add a little more butter if needed (If it's not well cooked, flipping will be hard and pancakes can break so make sure to wait until it's cooked completely so you can easily flip).

    Step 8 - Once the other side is cooked as well (in about 2 minutes, use a toothpick to insert through the center to make sure it's fully cooked), carefully transfer the prepared red velvet pancake to a serving dish.

    Step 9 - Add more butter to the pan and similarly cook all red velvet pancakes until the batter is all finished, and transfer them to a serving dish.

    Step 10 - Serve hot with pure fresh maple syrup and strawberries for best results, or use this roasted strawberry sauce or strawberry sauce in instant pot!
