Strawberry compote or strawberry sauce for angel food cake, cheesecake, pancakes, waffles, french toast (or any bread toast), ice creams, cupcakes, yogurt, panna cotta or oatmeal quickly prepared in the instant pot pressure cooker! This makes an easy, quick strawberry flavored topping or filling as you want.
As you know, strawberries are very popularly used for making sauces, jams etc that are used as side dish or topping for breakfast foods or desserts etc and they are used as fruit fillings for multilayer cakes.
In this roasted strawberry sauce recipe, I made the strawberry sauce without refined sugar using maple syrup!
I have also made this strawberry honey jam in instant pot which is made without refined sugar and only sweetened using honey.
This strawberry compote is not only for angel food cakes or cheesecake, but I like it as a topping or filling for other kinds of cakes like chocolate cake, yellow cake etc as well.
This delicious strawberry compote is made using fresh, sweet & slightly tart strawberries which is perfect to make the sauce or topping!
It also makes a great filling for cake layers as well, for cakes like strawberry cakes or white cakes and yellow cakes.
What is strawberry compote or strawberry sauce?
Strawberry compote or strawberry sauce is very popularly used strawberry topping or sauce for cheesecakes, pancakes, ice creams etc.
The difference between strawberry compote and strawberry jam is that strawberry jam is further cookened to jam consistency, while the sauce has more liquid like consistency so you can easily pour it over cheesecakes or pancakes.
Also, we usually use more sugar or sweetener in strawberry jam because jams tend to be more sweeter than sauces.
We actually need only 2 ingredients to make this strawberry compote.
And those two ingredients are real, fresh strawberries and sugar.
These are the two essential and main ingredients you need for making this strawberry compote in the instant pot.
How to thicken strawberry sauce or strawberry compote?
Homemade strawberry compote can be easily thickened.
You can adjust the consistency of the strawberry compote or sauce based on your preference.
Once you have cooked the strawberries in the instant pot and simmer for a couple of minutes, the sauce begins to thicken.
A little cornstarch can be used to further quicken the process and also if you need a more thick texture for the strawberry compote.
But this is not necessary to make the sauce and it is an optional ingredient that you need to use only if you want a thicker strawberry sauce.
You may also add more ingredients to further enhance the flavors of the sauce like a little lemon juice or vanilla extract.
However, I have found that the perfect strawberry compote for cheesecake or pancakes or toast only need strawberries and sugar.
I have also made this roasted strawberry sauce with maple syrup where we made the strawberry sauce without sugar using only maple syrup to sweeten the sauce.
In this instant pot recipe for strawberry sauce we just use sugar to sweeten the sauce.

So here is how you can make easy, delicious strawberry sauce in instant pot pressure cooker.
How To Make Strawberry Compote In Instant Pot?
We use the following ingredients to make easy strawberry sauce in instant pot.
ingredients used
strawberries 1 lbs (16 oz)
sugar ⅓ cup
To make cornstarch mixture (optional)
cornstarch ½ tablespoon
water 2 tablespoons
step by step instructions
Wash the strawberries very well, hull the strawberries (remove the green parts) and slice in hlaves. You can slice in quarters for bigger sized strawberries.
Add the sliced strawberries to the instant pot.
Also add sugar to the instant pot, mix well with the strawberries.
Close the instant pot with lid in sealing position and cook in high pressure for 1 minute.
Once the cooking is done, press cancel button and wait for a natural pressure release for about 8 minutes.
After the eight minutes of natural pressure release, if the pressure is not completely released by this time, carefully do a gradual manual pressure release.
Once the pressure is all released, carefully open the lid.
Stir the contents and press saute to simmer the contents to thicken the sauce.
Make sure you stir often and the sauce will thicken in few minutes.
To add cornstarch mixture (optional)
If using cornstarch mixture to quicken the process or if you want a thicker sauce, make the cornstarch mixture by mixing the cornstarch and water.
Make sure there are no lumps in the prepared cornstarch mixture.
Add the prepared cornstarch mixture to the simmering strawberry sauce, stir in and continuously stir so no lumps are formed.
The sauce will quicky thicken in about a minute or so, and it will further thicken as it cools down, so once the sauce reaches almost the desired consistency, press cancel to stop simmering.
Also transfer the inner pot to a safe, cooler place so the sauce won't thicken further.
Once the strawberry sauce is cooled a bit, transfer to air tight, clean, dry glass jars.
This is a small batch strawberry compote or sauce and if you are not using the same day, make sure to transfer the prepared sauce to refrigerator.
You can store this strawberry sauce in the refrigerator for about one to two weeks time if you store it properly.

Can you use frozen strawberries to make strawberry compote in instant pot?
Yes, you may use frozen strawberries too, in this recipe for strawberry compote made in instant pot pressure cooker.
When you use frozen berries, the pot will take little extra time to come to pressure, so you do not really need to change the pressure cooking time.
How to make strawberry compote without sugar?
In this recipe for strawberry compote, we only use ⅓ cup of sugar for 1 lbs strawberries which not a lot of sugar.
However, if you wish to make this without sugar, you may completely skip the sugar or reduce the amount as you like.
If you are making this without any additional sugar, try to use strawberries that are sweet (some strawberries can be less sweet) so the sauce will be naturally sweet enough.
You may also use other sweeteners like honey or maple syrup.
However, when you use honey which is a liquid sweetener, you may need to slightly increase the amount of cornstarch used to thicken the sauce.
