Soft sugar cookies without baking powder or baking soda or eggs! This is an easy recipe for sugar cookies inspired by the popular Mexican style cinnamon sugar cookies.

It is not necessary to use baking powder in these simple and easy cookies and they are very soft in texture inside and slightly crunchy & chewy outside and super delicious as well!

So if you do not have baking powder or eggs at home, do try these yummy Mexican inspired cinnamon sugar cookies without baking powder.

Three ways to make sugar cookies without baking powder

In this recipe, I will explain three easy ways to bake these delicious sugar cookies without baking powder.

The recipe is the same for all methods, but the difference is whether you want to add the powdered sugar coating to the cookies or not.

And also if you decide to add the cinnamon sugar coating (like it’s used in Mexican sugar cookies), you can also decide when to add the sugar coating, based on how you would like the cookies.

First – If you skip the optional cinnamon sugar coating, you can still make delicious plain sugar cookies.

Then you can enjoy it just plain or you can add any icing of your choice.

Second – If you decide to use the cinnamon sugar coating, you may roll the cookies in the powdered sugar coating before you bake them, just like it’s done for Mexican cinnamon sugar cookies.

However, with this recipe, I have found that they almost look like cinnamon crinkle cookies but they are super delicious, and my favorite among these!

Third – The third way is to just bake them plain and then coat them with cinnamon sugar coating, like it’s done for Mexican wedding sugar cookies. They too are very delicious and much more easier and simple to do!

The picture that you see here is made that way – making plain cookies first and then rolling them in powdered cinnamon sugar mix.

Now you know the three easy ways to make these delicious Mexican inspired cookies, you can try your favorite way of making or you can try all three ways and decide which one you like the best.

So here is how you can make the simple, easy and delicious homemade cookies from scratch.

How to make soft sugar cookies without baking powder or baking soda?

To make these eggless sugar cookies without baking powder or baking soda, we use the following ingredients.

Ingredients used

for the dough:

all purpose flour 2 cups

salt ½ teaspoon

cinnamon powder 1.5 teaspoon

butter 1 cup softened

powdered sugar 2 cups

vanilla extract 1 teaspoon

for cinnamon sugar coating (optional)

powdered sugar ½ cup

cinnamon powder ¼ teaspoon

Step by step instructions

To make the cookie dough:

In a bowl, mix together the flour, salt and cinnamon powder until they are evenly mixed.

In another bowl, mix together the softened butter and powdered sugar until they are well mixed. Then add the vanilla extract to the butter sugar mixture and whisk well to form a creamy mixture.

Add the dry flour mixture to the prepared butter sugar mixture and mix together to form a crumbly mixture.

Then knead with your hands to form the cookie dough.

If necessary, you may add about 1 tablespoon of milk to make the cookie dough, in case the mixture is too crumbly to form the dough.

Once the cookie dough is formed, cover the dough and keep it in the refrigerator for about 45 minutes.

To make the cinnamon sugar mix (Optional):

In a bowl, mix together the ½ cup powdered sugar and ¼ teaspoon cinnamon powder to make the cinnamon sugar mixture. Keep this prepared mixture aside.

To make the cookies:

Once the cookie dough is chilled for about 45 minutes, you are all set to make the cookies!

Preheat oven to 350 degree Fahrenheit.

Prepare a baking sheet by lining with parchment paper.

Now make small balls out of the cookie dough and place the dough balls in the prepared baking sheet.

It is a good idea to leave some space between each dough ball, so they have enough space when they expand while baking. Since I had no space to bake them all together, I baked 12 cookies in the first batch and then baked the remaining in the next batch.

Now if you decide to roll the cookies in cinnamon sugar mix before baking the cookies, you can roll them now!

It is a good idea to roll them twice in the cinnamon sugar mix for the best results. If you do not want to do this now, just skip this step and proceed to the next step.

Once the balls are placed in the cookie sheet with even spacing in between each ball, place the cookie sheet in the preheated oven.

Bake the cookies for about 14 minutes until the cookies are lightly browned. Make sure not to overbake the cookies since overbaking can harden the cookies.

Once they are baked, immediately transfer the cookies from the hot oven and allow the cookies to cool down. Once they are cooled enough, the texture will be perfect and delicious!

The cookies taste the best while they are still slightly warm but they are delicious later too.

If you made plain cookies like this and if you wish to add the sugar coating now, you can coat the cookies now with the prepared cinnamon sugar mix to make it even more yummy.

Just place the cookies in the bowl containing the cinnamon sugar mix and coat both sides.
