for the cookie dough:
all purpose flour 1 cup
powdered sugar 1 cup
baking powder ¾ teaspoon
butter ½ cup softened
vanilla extract ½ teaspoon
cinnamon powder ¾ teaspoon
salt ¼ teaspoon
for cinnamon sugar mix:
powdered sugar ¼ cup (may adjust the amount as needed)
cinnamon powder ⅛ teaspoon
Step By Step Instructions
In a large bowl, mix together the following dry ingredients for the cookie dough - flour, cinnamon powder and salt until the ingredients are well mixed evenly.
In a different bowl, mix together the butter and powdered sugar (one cup) until sugar is dissolved.
Also add the vanilla extract and mix with the butter sugar mixture.
Pour the prepared butter sugar mixture to the dry flour mixture and mix well using a spoon to form a crumbly mixture.
Then knead with your hands to make the cinnamon cookie dough.
In case the mixture is still crumbly and you have difficulty forming the dough, you may add about one teaspoon of water or milk and knead again to make the cookie dough.
Cover the cookie dough and place the cookie dough for about 10 minutes in the refrigerator.
To make the cinnamon sugar mix for rolling the cookies:
In a bowl, mix together the ¼ cup powdered sugar and also ½ teaspoon cinnamon powder until they are evenly mixed.
Keep this mixture aside until the cookie dough is chilled and we are ready to bake the cookies.
To make the cinnamon sugar cookies:
Preheat oven to 350 degree Fahrenheit.
Layer a baking sheet with parchment paper.
Make small balls out of the prepared cookie dough (chilled dough) and roll the balls in the cinnamon sugar mix that we made.
Place the cookie dough balls in the baking sheet, make sure to leave some space between the cookie dough balls as they will expand while baking.
For best results, roll each of the cookies once more in the powdered sugar & cinnamon mix so they will have more coating which will help in creating beautiful crinkle patterns!
Bake the cookies in the preheated oven for about 14 to 15 minutes until they are lightly browned on the edges.
The cookies may look too soft at this point, but it's fine as they will harden enough as they cool down.
If you bake for more time, the cookies can turn hard.
So once they are baked, immediately transfer the cookies from the hot oven.
Allow the cookies to cool down, enjoy with hot coffee, tea or milk!
The cookies are slightly crunchy around the edges and soft inside in texture and they are super delicious!
