    Corn dip with cream cheese (with microwave steamed frozen corn kernels from a bag of mixed yellow and white corn kenels) made with only 4 ingredients and just 2 main ingredients - frozen corn and whipped cream cheese (plus salt and pepper) is a super easy, simple, delicious and popular dip or side dish (just like this scallion cream cheese dip) to serve with chips like fritos (corn chips), tortilla chips, potato chips, veggie sticks or fries! Also try this cream cheese corn casserole if you like the combination of cream cheese and corn!

    Just like you can microwave frozen corn kernels for this recipe, you can also cook frozen corn on the cob in microwave!     This corn dip is also known as Mexican style street corn dip as it is inspired by the flavors of the Mexican street corn! However, this is an easy corn dip with cream cheese using just 4 ingredients and I used frozen corn to make this corn dip which is super convenient but you can also add more Mexican street corn flavors to make it even more authentic!

    You may also add sour cream or mayo as they are popularly used in the Mexican street corn style dip recipes but I made this cream cheese corn dip without sour cream or mayo for a sweeter, less sour version and it's still very delicious. Feel free to tweak the recipe if you want to add the sour cream or mayo or other suitable add ons like lime juice, taco seasoning etc to suit your taste!

    step by step instructions to make corn dip with cream cheese

    Step 1 - Place the frozen corn in a microwave safe bowl.

    Step 2 - Microwave the frozen corn for about 2 minutes so it will be soft (if not, you may heat for an additional one minute).

    Step 3 - Once the corn is heated in the microwave (and there is no leftover water content in the bowl), add salt and black pepper, mix well to combine with the corn. You may add a little (about 1 teaspoon) of lime juice or lemon juice if you wish.

    Step 4 - Now add the whipped cream cheese also to the bowl and mix well to combine with the corn. (If you want to use sour cream or mayo (about 1 tablespoon) you may add that also and mix with the corn cream cheese mixture)

    Step 5 - Enjoy the prepared cream cheese corn dip warm or cold with any chips of your choice, like tortilla chips, fritos, potato chips etc as you like!

    I also like to use this cream cheese corn dip as a spread or filling for sandwiches sometimes with added cheese like cheddar or pepper jack or gouda, but it's also just so delicious as it is! Other than just using corn, you may also add lightly sauteed or fried chopped bell peppers or other spices or seasonings like taco seasoning if you wish!
