Notes: I used a small bag of 10 oz frozen stir fry vegetables which included carrots, green beans, peppers, mushrooms, onions and broccoli which is very easy and convenient to make a small batch of stir fry veggies in air fryer. If you have two bags of 10 oz stir fry vegetables (so total 20 oz veggies) or if you have a 16 oz bags of stir fry vegetables also you can follow the same method to prepare the stir fry, just make sure you double the other ingredients like oil, soy sauce, salt and seasonings if you double the veggies. I didn't use cornstarch or brown sugar in this air fryer stir fry recipe, which is often used to make stir fries along with other seasonings, and still it was perfectly delicious! Also, as I mentioned early, every brand of frozen packaged stir fry vegetables is different and I have noticed that many uses slightly different kinds of vegetables and sometimes the size of the vegetable slices too are different. This can result in slightly varied cooking times as well. So if your vegetables are not done to your preference once the cooking time is over, you can carefully stir the contents and continue cooking for few more minutes until they are done. The stir fry vegetable mix I used has relatively small vegetable slices and so they get done quickly in a cooking time of just 8 minutes.
