To make the roasted frozen cauliflower, we first coat the frozen cauliflower florets in some mild spices and oil and lemon juice, which you may adjust based on your preferences. And then just roast the frozen cauliflower florets directly in the preheated oven! Since I have used golden yellow colored turmeric spice (optional), the cauliflower florets turned out so bright & colorful too!

    roasted frozen cauliflower recipe

how long does cooked cauliflower last in the fridge?

In this recipe, we are use frozen cauliflower, which are roasted in the oven. Since we use frozen cauliflower, I do not recommend storing this in the fridge for a longer time. If you are not serving this the same day of preparation, you can store the cooked cauliflower in the refrigerator for another 1 to 2 days. I do not recommend refreezing the cauliflower for longer storage, since the cauliflower was already in frozen form. When you use fresh cauliflower, you may store cooked cauliflower in the fridge for about 3 to 4 days and you may store it in the frezer for even longer storage, though this will also depend on any other ingredient that you have used in the recipe.

    can you double this recipe?

Yes, you can double the recipe if you want more servings. You can use two 12 oz bags of frozen cauliflower if you want to double the recipe. You will need to increase the amounts of spices, salt, oil, lemon juice etc accordingly, based on your personal preference, if you double this recipe. However, make sure that when you arrange the cauliflower florets in the baking sheet, they should not be crowded and they should be arranged in a single layer. If they are crowded, they won't get roasted properly. So you may use a larger baking sheet or you may bake them in multiple batches if needed. The baking time, oven temperature etc will remain the same even when you double the recipe.

    spices to season cauliflower

I have used here some simple spices based on my personal preferences, and you may adjust the spices based on your preferences too. I have used turmeric powder as one of the spices to flavor the cauliflower, which makes the cauliflower more colorful by giving a golden yellow color to the florets. The addition of turmeric also makes it more flavorful, colorful & tasty. However, adding turmeric is not necessary and you may skip it if you do not have turmeric at home. To make it more spicy, you may add spices like curry powder if you like (just use a small amount like ½ teaspoon or so if you are using).
