Frozen Vegetable Stir Fry With Rice Noodles

Stir fry vegetables served with noodles makes a delicious, easy to make, quick meatless vegetarian noodles recipe for lunch or dinner! In this recipe, I used rice spaghetti noodles that goes great with the stir fry veggies, but you may use other noodles like egg noodles, regular spaghetti noodles, ramen noodles or other varieties of rice noodles etc as you like!

The buttery noodles is served with the delicious frozen vegetable stir fry mix with tasty and crunchy vegetables that has lots of flavors on it’s own and it also has flavors from the delicious sauce.

You can either toss the prepared the noodles with the stir fry veggies or just top the veggies over the noodles as you prefer!

What Vegetables Are Used In Making Stir Fry?

To make easy vegetable stir fry, I used frozen stir fry vegetables mix.

The frozen stir fry mix sometimes contain different varieties of sliced veggies, you can use any of your favorite kind.

The stir fry veggies usually contain sliced onions, carrots, bell peppers, mushrooms, snow peas, baby corn etc but some frozen stir fry mix may have other veggies too.

You can use whichever you have on hand or you can make your own using fresh vegetables!

Stir Fry Sauce For Preparing Stir Fry Veggies:

In this recipe, I have used the stir fry sauce that came with the frozen stir fry vegetables.

You can use store bought stir fry sauce or make your own homemade stir fry sauce to use in the recipe.

If you do not have store bought stir fry sauce, I have given the optional ingredients and instructions to make your own stir fry sauce for the recipe, as you may need.

Substitute for rice spaghetti noodles:

Any type of rice noodles or any noodles can be used to substitute rice spaghetti noodles in this recipe!

You can use rice glass noodles or your favorite Asian style rice noodles to use in this recipe, which goes great with Asian stir fry veggies!

If that is not an option, just use regular spaghetti noodles which works great in this recipe.

So here is how you can make easy, delicious vegetable stir fry noodles with vegetables using rice noodles and frozen stir fry vegetables.

How To Make Stir Fry Vegetable Rice Noodles With Frozen Veggies?

To make easy, delicious frozen vegetable stir fry noodles using rice noodles, we use the following ingredients.

Ingredients

frozen stir fry vegetables 16 oz

rice noodles 12 oz (I used gluten free rice spaghetti noodles)

salt adjust to taste

for the noodles:

water as needed to boil the noodles

butter 4 tablespoons

sesame oil 1 tablespoon (or use olive oil or peanut oil as you prefer)

garlic powder 1 teaspoon

onion powder ½ teaspoon

soy sauce 1 tablespoon

for the stir fry vegetables:

sesame oil 1 tablespoon

stir fry sauce ½ cup

(if you do not have stir fry sauce, use the following optional ingredients to make your own)

Optional ingredients for stir fry sauce:

sesame oil 1 tablespoon

soy sauce 1 tablespoon

brown sugar 1 tablespoon (optional)

fresh minced or grated ginger 1 teaspoon (or use ginger powder)

fresh garlic minced 1 tablespoon (may use 1 teaspoon garlic powder instead)

cornstarch 1 tablespoon (optional)

Step by step instructions

To cook the noodles:

Cook the rice spaghetti noodles (or any other variety of rice noodles or any noodles of your choice) based on package instructions, to make al dente noodles.

Make sure not to overcook the noodles, since al dente noodles which is boiled just enough makes the perfect noodles for this recipe.

I used rice spaghetti noodles made using rice and corn as the main ingredients and I cooked for 9 to 10 minutes time in boiling water (in medium to high heat) with a little salt and one tablespoon oil (sesame oil or olive oil or peanut oil preferred) to make the perfect rice spaghetti noodles.

Once the noodles is boiled, immediately drain the water carefully and transfer the noodles to a large frying pan.

Add the butter, garlic powder, onion powder and soy sauce, stir fry the noodles in low to medium heat for about 2 minutes.

Now the noodles is ready and you can keep it aside, while you work on making the stir fry vegetables!

To cook the frozen stir fry vegetables:

In a large sized frying pan or skillet, place the frozen stir fry vegetables.

Cook in low to medium heat until the ice melts and water evaporates (once the ice from frozen veggies melts, make sure to gently mix in between).

Once the water is all evaporated, add sesame oil and enough salt, mix well to combine with the veggies and stir fry the vegetables for about 3 to 4 minutes until the vegetables are lightly cooked but still crunchy in texture (stir in between!).

Once it is done, add the stir fry sauce, mix well with the stir fry vegetables to coat evenly and cook for another 2 to 3 minutes in low heat to make the best stir fry veggies using the frozen mix!

If you do not have homemade or store bought stir fry sauce, you can make the stir fry sauce using the optional ingredients mentioned above for making stir fry sauce.

To make an easy stir fry sauce quickly, combine the ingredients sesame oil, soy sauce, brown sugar (optional) in a mixing bowl.

Also add ginger and garlic, mix well to combine.

Add cornstarch also to the bowl, mix well to combine with the prepared sauce mixture.

Make sure there is no lumps from the cornstarch added.

If you do not want to use cornstarch, you may even skip the cornstarch, but make sure to all other ingredients other than brown sugar, which is also an optional ingredient.

Once you have combined them all in the mixing bowl, you have your homemade stir fry sauce which you can use in the recipe to complete cooking the stir fry vegetables.

Follow the remaining instructions above to complete the preparation of stir fry vegetables using the stir fry sauce you made!

Once the stir fry vegetables is made, add the preapred rice noodles also to the frying pan, gently mix in to combine with the veggies and stir fry the noodles with the vegetables for another 2 to 3 minutes to make delicious stir fried noodles with vegetables.

However, this is optional, you can also just serve the noodles on a serving plate topped with prepared stir fry vegetables as a topping!

If you are making this at home for your family or guests, you can also serve the noodles and stir fry vegetables in separate serving plates, so anyone can just serve themselves the noodles and veggies as they like!
