I won't say this is my kids' favorite though as they don't prefer the roasted crispy texture of kale leaves and they prefer soft cooked kale leaves in other recipes like this kale chickpea curry or the fresh texture of kale leaves in salads like this kale blueberry watermelon salad! Adding more flavors like garlic, black pepper or using cheese like parmesan can take it to the next level, though I simply enjoyed this just with salt!
