Cold water start method is old fashioned, traditional method used to cook eggs.

They make perfect boiled eggs, whether you want hard boiled eggs, soft boiled eggs or medium boiled eggs.

The thing is that, you need to use older eggs to make perfect, easy peel hard boiled eggs when you follow cold start method.

If you use fresh eggs, the eggs could be difficult to peel.

With cold start method, it is best to use cold, refrigerated eggs that are few days older.

Place the eggs in a single layer in saucepan and add cold water that stays about 1 inch above the level of eggs in the saucepan.

Also sprinkle little baking soda (about ½ teaspoon).

Now, turn on the heat (keep in high heat) and bring the water to a boil.

Once the water starts boiling, reduce the heat to low and cook in low heat for 9 minutes to make the best hard boiled easy to peel eggs!

Once the eggs are boiled, you need to immediately turn off the heat and transfer the pan to a cooler place. Then carefully transfer each egg to a large bowl half filled with cold water and ice cubes for ice water bath.

This is important to prevent the further cooking of eggs.

When the eggs are perfectly hard boiled, the interior part where the yolk locates will be dry and bright yellow in color.

Overcooking of eggs will result in discoloration of eggs, and they turn grey or green on the yolk.

To avoid the discoloration and over cooking of eggs, it is important to do the ice water bath. It also helps with easy peeling of egg shells once they are cooled enough in the ice water.

It is a good idea to let the eggs be in the ice water bath for several minutes before trying to peel the shells off.

How long does it take to make hard boiled eggs with hot start method?

With hot water start method, it is ideal to use eggs at room temperature. Because if you place cold eggs in hot boiling water directly, the eggs might break so it is not recommended.

If you use fresh eggs and than refrigerated, older eggs, it is a good idea to use hot start method to hard boil eggs.

To do hot start method, first add water to a medium sized sauce pan. It is a good idea to use about 3 cups of water if you are using about 6 to 8 eggs (that should fit in a single layer in the pan so make sure not to use too many eggs!).

Also sprinkle some baking soda, turn on heat and bring the water to a boil.

Once the water begins boiling, gently place the eggs one by one in the pan. You will need to do this very carefully since the water is very hot and eggs need to be immersed without breaking or spilling the hot water. You may use long spoons to carefully lower the eggs one by one to the pan with hot boiling water (keep in mind that with hot water start method, there is an increased chance of eggs breaking in the process than cold start method).

Once the eggs are immersed and placed in a single layer, close the saucepan with lid, reduce the heat to low and cook for 12 minutes (this is more time than cold start method because we place the eggs at a later stage).

Once the cooking is time is done (it is always a good idea to use a timer so you don’t miss the time), turn off heat and move the pan to a cooler place.

Proceed with ice water bath for several minutes, then you can easily peel off the eggs!
