Fried Over Hard Eggs For Easy Breakfast Or Brunch

Serve this fried over hard eggs with your toast, pancakes, oatmeal, cereal or vegetables for a quick, delicious and easy breakfast or brunch for those busy mornings.

What is fried over hard eggs or over well eggs?

Over hard eggs are basically fried eggs where the egg yolks are completely cooked through.

They have yolks similar to that of hard boiled eggs.

If you slice through the cooked egg yolk, they look like the yolks of boiled eggs.

Now you can make this two ways – the egg yolk intact inside the whites (both cooked completely through) or the egg yolks broken and slightly spread but still cooked through completely.

When the yolks are gently broken as it begins to set, it is sometimes specifically referred as over well eggs.

Whether to break the yolks or not, is your preference though, and in any case when you say over hard eggs or over well eggs, it means the yolks are completely cooked through.

The egg whites are fried just like any fried eggs, but there is no runny yolks here as the egg yolks are completely cooked through and set.

So if you do not like runny egg yolks in your fried eggs, do try this easy over hard eggs for perfectly cooked egg yolks and fried whites!

How long to cook fried over hard eggs?

To make the fried eggs so that the whites and egg yolks are completely cooked through, you will need to first cook until the whites are cooked and set and the egg yolks are slightly set.

This will take 2 to 3 minutes in medium low heat (the exact time will depend on the size of eggs and also the temperature, pan used etc as well).

Then you need to flip the eggs and cook for another 1 to 2 minutes so the yolks are completely cooked through.

So the total time to cook fried over hard eggs is about 4 to 5 minutes!

How to know if the fried eggs are completely cooked through and no runny yolks?

If you are not sure if the yolks are completely cooked, gently break the yolks using the edge of spatula or using a fork and see if it’s cooked (see the picture).

If the yolk is very runny or slightly runny in texture, you can see it while you gently poke or break the eggs with a fork or spatula.

If there is little uncooked yolk, it should stick on the fork or spatula that you use to break the yolk and so there should be some sticky yolk traces.

If you see there is no trace of runny yolk, it’s done!

Other Fried Egg Variations: Differences In Egg Yolk Texture

Over Easy Eggs

Over easy eggs are fried eggs cooked on both sides, but the egg yolk is runny so those who like the egg yolks to be runny but the whites to be cooked by flipping and cooking on both sides, this is the great!

This is slightly different from fried sunny side eggs, because sunny side eggs are usually not flipped and cooked and the yolks are intact but has a runny texture once you break into it.

Over Hard Vs Over Medium Eggs

Unlike over hard eggs, over medium eggs have a slightly runny yolk. The whites are completely cooked through just like other fried eggs. When it is served, it may not look like the eggs are runny, but if you break the yolk using your fork, you will see that the yolk is not completely cooked but its still runny.

So, fried over medium eggs means somewhere in the middle between over easy eggs with runny yolks and over hard eggs with completely cooked yolks.

How to make fried over hard eggs for breakfast?

To make easy, quick fried over hard eggs, we use the following ingredients

salt adjust to taste

black pepper powder ½ teaspoon (adjust to preference)

garlic powder 1 teaspoon

onion powder ½ teaspoon (optional)

butter or olive oil as needed to season the skillet or pan

Step by step instructions

Gently crack the eggs to a heated non stick pan or seasoned iron skillet.

Keep the heat in medium low, sprinkle salt and seasonings (I used garlic, onion powders and black pepper here), and cook for about 1 to 2 minutes until the whites are set and the egg yolks are beginning to set.

The yolks need not be completely cooked at this point, but they shouldn’t be runny either.

The best timing to flip the eggs is when the egg yolks are beginning to set so it won’t spread much as you flip over.

Once the egg whites are set and the yolks are slightly set, gently flip over the fried eggs (you may gently break the egg yolks just before flipping if you wish) using a good spatula and cook for another 1 to 2 minutes until the yolks are completely cooked through.

To see if the yolks are completely cooked, you can use a fork to break the yolks or gently break the yolks using the spatula to see if the insides are well cooked.

You may also cover the pan with a lid and cook for about a minute or so, which will fasten the process, in case the yolks still need to be cooked through.

You may add more seasonings like more black pepper if you wish!

Notes

If you are a beginner in making fried eggs, it may be difficult to flip all the eggs when you fry multiple eggs together in the same pan, because as the eggs are fried the whites will spread and stick together.
One way is to just fry one egg at a time, if that is more easy for you.
Another way is to just break the fried eggs using a sptual through the whites where they are joined, and gently flip each individual fried egg carefully.
