Berry Cobber Using Frozen Bluerries & Fresh Strawberries & Bisquick Mix
Berry cobbler is delicious fruit cobbler made using fresh or frozen berries and in this mixed berry cobbler, we use a mix of frozen blueberries and fresh strawberrries.
We do not make a traditional biscuit style topping here as the crust is more and soft like the texture of the cake, which is what I usually prefer in my cobblers.
In this easy recipe to make berry cobbler, I used bisquick all purpose baking mix to make an easy batter for the crust, and it turned out perfect and delicious!

Full Ingredients List:
for the fruit filling:
frozen blueberries 1 cup
strawberries 1 cup
sugar ¼ cup
for the crust:
bisquick all purpose baking mix 5.5 oz (1 package)
milk 1 cup
sugar ¼ cup
vanilla extract 1 teaspoon
cinnamon powder ½ teaspoon
Step by step instructions
Preheat the oven to 375 degree Fahrenheit.
Wash the strawberries, discard the green leaves on the end, slice in halves. If you have large sized strawberries, you can slice each into four pieces.
Place the sliced strawberries in a bowl.
Also add the frozen blueberries (you may use fresh blueberries as well, if using fresh blueberries make sure to wash the berries) also to the bowl.
Add the ¼ cup sugar for fruit filling also to the bowl, mix well to combine with the fruits.
Keep this fruit mixture aside.
In a separate bowl, add the bisquick baking mix.
Also add cinnamon powder and sugar mix well to combine with the dry mix.
Add milk and vanilla extract also to the bowl and slowly mix well to combine with the dry baking mixture to form the batter, without forming any lumps.
If there is any lumps in the batter, the texture of the crust may not be smooth, so make sure there is no lumps in the batter, you may also use a whisk if necessary.
To bake the cobbler:
Preapare a 9 inch baking pan by greasing with little butter or oil and add the fruit filling.
Using a spoon, arrange the berries in a single layer so the blueberries and strawberries are evenly layered across the pan.
Pour the prepared batter over the fruits. Make sure to evenly spread the batter across the pan so all the berries are evenly coated with the batter.
Bake in the preheated oven for about 40 to 45 minutes until the crust is baked golden brown in color!
Allow the cobbler to cool down a bit, serve the warm cobbler with a scoop of ice cream of your choice!

Hi, one individual package of bisquick is what I used that is 5.5 oz which is slightly more than 1/2 cup. If you do not have individual 5.5 oz package, I recommend using 3/4 cup bisquick flour for this recipe. Hope this helps. Thank you.
