The broccoli is well roasted in the oven and the onions are well roasted as well, they are also slightly caramelized and slightly crunchy in texture!

This is dairy free no cheese veggie casserole, but you may also add some cheese to make this a more rich, cheesy broccoli casserole like dish! If you want to add cheese, sharp cheddar cheese is a good option.

You can use about 2 cups shredded cheese and also some bread crumbs to add nice texture.

But this is totally optional and the oven baked broccoli and onions without cheese is just as delicious and healthy as well!

Though I used white onions in this recipe, which adds a nice crunchy texture and good flavor to the dish, you can also use red onions or yellow onions for a more subtle flavor and soft texture.
