This is one of the most simple, easy vegan sweet potato vegetable side dish that you can quickly make in the oven for lunch, dinner or on holidays like Christmas or Thanksgiving as well!

Do you need to peel the sweet potatoes?
No, you do not need to peel the sweet potatoes to make these delicious roasted sweet potato rounds or oven baked sweet potato slices, but make sure the skin of the sweet potatoes are clean.
The peels of the sweet potatoes actually add to the texture and flavor of this dish.
However, its just a personal choice and if you wish, you can peel the sweet potatoes as well.
You can use a potato peeler to peel the sweet potatoes easily, if you want to peel them.
Since we are not peeling the sweet potatoes, make sure to wash them very well to get rid of any dirt in the skin.
If you think the skin is not very clean even after washing or scrubbing, you may have to peel the sweet potatoes.
How To Slice Sweet Potatoes To Make Baked Sweet Potato Slices?
We slice the sweet potatoes in slightly thick round slices in almost even size to make the baked sweet potato slices.
You may slice them anywhere from ¼ inch thickness to ½ inch thickness. I usually slice them in ½ inch thickness which is what I recommend for this recipe.
If you slice them thinner, they may get cooked too fast and may burn easily depending on the oven temperature.
How To Make Roasted Sweet Potato Rounds Or Coins?
They are so easy to make.
You just wash the sweet potatoes very well in water, slice them round (slightly thick) and marinate with few spices (you can adjust the flavorings based on your preference) and then bake them in the oven!
I didn't even peel the skin of the sweet potatoes but if you wish you can peel the skin of sweet potatoes.
To achieve the perfect texture, we slice them in round shape or coins which are about ¼ inch or ½ inch thickness and then bake them until they are soft inside and crispy outside (once they are cooked and soft, we increase the oven temperature and bake them further to make them slightly crunchy on the outside).
So here I will explain how you can make this delicious, easy, healthy baked sweet potato slices in the oven.
We need the following ingredients to make the baked sweet potato slices.

sweet potatoes 2 medium sized
salt as needed
oil 2 tablespoons
garlic powder 1 teaspoon
black pepper powder 1 teaspoon
Step by step instructions
Wash the sweet potatoes very well in water and slice the sweet potatoes in round slices (you may peel the sweet potatoes if you wish). Keep the slices slightly thick.
Transfer the sliced sweet potatoes to a bowl and add the salt, oil, garlic powder and black pepper powder also to the bowl and mix very well with your hands so the spices will blend well with the sliced sweet potatoes.
Preheat the oven to 400 degree Fahrenheit.
Layer a baking sheet with foil which is greased with a little oil (or use non slip baking mat) and place the sweet potato slices in a single layer (in case there is more slices you can always do in a second batch, but make sure to layer them in a single layer so as not to overcrowd the baking sheet).
Bake in the preheated oven for about 35 to 40 minutes or until the top begins to lightly brown.
To make it more crunchy, crispy and delicious, increase the oven temperature to 450 degree Fahrenheit, flip the slices very carefully and bake for another 6 to 7 minutes.
Always watch them during the final minutes of baking to avoid burning of the sweet potatoes.
Once they are baked enough to your liking, immediately transfer from the hot oven, allow them to cool down slightly and enjoy!
What Kind Of Sweet Potatoes Are The Best To Make Baked Sweet Potato Slices?
We use the colorful, deep orange colored sweet potatoes to make these delicious sweet potato rounds.
To make the best baked sweet potato slices, choose medium sized orange sweet potatoes which are easy to slice and bake.
You may try other varieties of sweet potatoes as well, but I haven't tried any other variety so I am not sure about the results (but I think you may need to adjust the cooking times for other varieties as needed).
Also, as I said earlier, medium sized sweet potatoes are the best to make baked sweet potato slices.
This is because they are easy to slice evenly and they are easy to bake compared to the large ones.
The large sized sweet potatoes may take longer to cook and the small sized ones may cook too fast, so it is best to choose medium sized sweet potatoes for this recipe.
