Peach sauce is easy to prepare during summer season when ripe, juicy peaches are seasonal and easily available.
In Georgia, I have found that we have lots of good quality peaches over the summer and it's just easy to make things with peaches like this easy, fresh peach sauce.
I love ripe, juicy and sweet yellow peaches and as much as I love enjoying them fresh, I also like to try new recipes using peaches.
I have also made easy, delicious strawberry peach cobbler, peach jam in instant pot without pectin, spiced peach butter, peach juice, peach lassi (Indian style peach yogurt smoothie) etc!
This peach compote or peach sauce is the next thing I wanted to make and it turned out perfect so I like making this again and agian when I have leftover ripe peaches.
What is peach compote or peach sauce?
Peach compote or peach sauce is fresh fruit compote or fruit sauce made using ripe, juicy peaches.
I have used ripe, yellow peaches to make this peach compote which turned out perfect in terms of flavor & texture.
Peach sauce is slightly different from peach jam beacuse in jam recipes, we usually add more sugar and they are cooked for more time so they reach the consistency of jams which is more thick.
The sauce consistency or texture is not as thick as that of jams and so we can make fruit compotes much faster than making fruit jams.
Also, as I mentioned early, we need less sugar or sweetener to make sauces compared to jams, since we do not need the sauce to be very sweet like jams.

So here is how you can easily make delicious peach compote or peach sauce in the instant pot.
How to make peach compote or peach sauce in instant pot?
We use the following ingredients to make easy, delicious peach compote or peach sauce in the instant pot pressure cooker.

5 medium sized ripe yellow peaches (about 2 cups sliced)
sugar ¾ cup
vanilla extract 1 teaspoon
step by step instructions
Wash, peel and pit the peaches (discard the pit) and slice in medium sized pieces.
Add the peach slices to the instant pot.
Also the sugar and vanilla extract to the instant pot, mix well with the peaches so the sugar will dissolve.
Close the instant pot with lid in sealing position and cook in high pressure for 7 minutes.
Once done, press 'keep warm/cancel' button and wait for a natural pressure release.
If you are in a hurry, you may do a careful, controlled gradual manual pressure release after about 12 minutes.
Once the pressure is all released, carefully open the lid of the instant pot.
Stir the contents & mash the peaches using a potato masher depending on the preferred consistency you want for the sauce (you do not need to mash this a lot since we are making peach sauce, unless you want a very smooth consistency for the sauce).
Press saute, simmer the contents (may continue to mash the peaches if you need to) for another couple of minutes so the sauce will thicken.
If you simmer for more time, the sauce will further thicken and the consistency can become similar to that of jam.
Also, keep in mind that the sauce will natuarally thicken more as it cools down.
Once the sauce is done, it is a good idea to transfer the inner pot to a safe, cool area, to avoid further thickening of the sauce.
Carefully transfer the prepared peach sauce to bowls so it will cool down more easily.
Once the sauce reaches the room temperature, you can transfer the sauce to clean, dry, air tight glass containers and store this in the refrigerator for about a week!
How to serve peach sauce?
Peach sauce is a delicious topping for many desserts like cheesecakes, cakes, ice creams and more.
Peach sauce can also be served for breakfast by adding to oatmeal, yogurt, pancakes, waffles, biscuits etc!
I have found that this delicious fruity sauce also makes a great filling for cake layers.
If you want to make a peach filling for cake, you can add this in between cake layers along with whipped cream frosting, cheese frosting etc.
Peach sauce can also be used to make quick drinks like peach milkshakes, smoothies etc if you like, even when you do not have fresh peaches at home.
