what does egg do in pancakes?
If you are not sure what do eggs do in pancakes, know that eggs are mainly used as binding agent in pancakes, cakes etc. They help hold the other ingredients like flour, milk etc together as you cook the pancakes. Eggs also help the pancakes & cakes rise. Though we use baking powder or baking soda in most of the pancake and cake recipes, eggs do help to rise the pancakes better while holding the structure of the pancakes without breaking apart while you cook them. Also, eggs add a rich and delicious flavor to the pancakes and also cakes. For these reasons, we can't avoid using eggs in many pancakes and cake recipes. However, we may not want to use eggs always in pancakes or we may run out of eggs in kitchen sometimes. So we can use substitutes for eggs in pancakes which will help us make delicious pancakes even without using eggs. Eggs also add a slightly dense texture to the pancakes (so if you use many eggs, the pancakes will probably turn more dense) so many eggless pancakes are mostly more light & delicate in texture.
how to use ground flax seeds to substitute eggs in pancakes?
In general, you need one tablespoon of ground flaxseeds (powdered flaxseeds) to substitute one egg in pancakes (or cakes, muffins etc as well). To make an easy egg substitute using ground flaxseed meal, we can dissolve the one tablespoon of ground flaxseeds in 2 to 3 tablespoons of water (depending on the recipe). However, in this eggless pancake recipe, we directly mix the ground flaxseeds with warm milk since we use milk in the recipe, and so you do not have to make the flaxseed egg separately.
Just make sure to stir in the flaxseed powder well with the milk, so it won't clump together and mix evenly with the flour to make the pancake batter. Here we use ground flax seeds powder to replace eggs in the pancakes recipe and this easy egg free pancake recipe is very simple to follow, you only need the extra ingredient of ground flax seeds powder. You may also use this ground flax seeds powder in your morning cereals or porridge like oatmeal or even smoothies or milkshakes, unless you have any specific health conditions. Generally, flax seeds are considered good and it is a plant based vegan food that provides a lot of natural fiber. However, keep in mind that using flax seeds in food may or may not be appropriate for everyone. Its not just flax seeds that can make a substitute for eggs. In this recipe for pancakes without eggs, we use ground flax seeds powder to make the egg free pancakes. However, there are more egg substitutes to make pancakes like the following substitutes.
- applesauce – ¼ cup applesauce to substitute one egg
- bananas – ¼ cup mashed banana to replace one egg
- yogurt (or greek yogurt)
- milk (works in some recipes)
- chia seeds
I have successfully used both yogurt & applesauce as egg substitutes for this easy & delicious cornbread without eggs recipe which is also a favorite of mine. Keep in mind that while these egg substitutes usually work, in some recipes they may not work very well and also depending on what you have used, it may affect the flavor too. For example, if you are using mashed bananas, the pancakes are going to have banana flavor as you can guess. While using applesauce & yogurt can help in many pancake recipes to substitute eggs, the use of milk may not always help with it. Milk is a liquid and it works in some pancake recipes. However, remember that milk cannot be used in all pancake recipes to replace eggs. Chia seeds mixed with water or milk usually works the same way as flaxseeds.

- 1.5 teaspoon baking powder
- salt a pinch
- 3 tablespoons sugar
- 1.5 cups whole milk
- 1 tablespoon ground flax seeds
- ¼ cup canola oil
Step By Step Instructions
To make the pancake batter
- Mix together the following dry ingredients in a mixing bowl - flour, baking powder, sugar and salt.
- Warm the milk slightly (you can microwave the milk for about 30 seconds) and mix the ground flax seeds powder in it. Stir well and let it sit for few minutes.
- Add oil to the milk and flax seeds mixture (stir the flax seeds mixture once more very well before adding the oil) and mix well.
- Add this milk-flax seeds-oil mixture to the dry flour mixture and mix well to make the pancake batter.
To make the pancakes
- Apply oil and heat an iron griddle(or any non stick pan that you use), and when it is heated, add a ladle full of batter to the griddle.
- When bubbles appear and when sides start to brown, try slowly to lift the pancake starting from the sides. If they stick, you need to wait for few more seconds before you try again. Always cook the pancakes on low heat.
- Once the pancake is flipped, wait for one more minute so that the other side is also cooked.
- Similarly you can make all pancakes. Instead you may keep the pancake batter in refrigerator for a couple of days, for later use.
- If keeping the batter in refrigerator, the batter may become little thick, so you may add little water or milk to achieve the pancake batter consistency.
- Serve the yummy egg free pancakes with butter, yogurt, maple syrup or honey!
