This blueberry cake is so easy to make at home since we use frozen blueberries and other simple ingredients available at home.
If you want to use fresh blueberries, you may try using fresh blueberries as well however you may need to slightly reduce the baking time if you are using fresh berries. So if you have fresh blueberries, you can try that too! Using frozen blueberries is even more convenient and time saving so if you always have bags of frozen blueberries in your freezer, this is a great way of using any leftover frozen blueberries. This simple homemade blueberry cake is flavored with vanilla extract and also lemon using fresh lemon juice which pairs nicely with the blueberries. I didn't use lemon zest in this recipe, but you may also use lemon zest (about 1 tablespoon) if you want more intense lemon flavor!

To make easy, simple and moist lemon blueberry cake, we use the following ingredients.

- all purpose flour 1.5 cups
- baking powder 1.5 teaspoon
- frozen blueberries 1.5 cups
- lemon juice ¼ cup (from a medium sized lemon)
- sugar 1 cup
- eggs 2 large
- butter ½ cup softened
- whole milk ¾ cup
- vanilla extract 1 teaspoon
step by step instructions
- Place the all purpose flour in a large bowl.
- Also add baking powder to the flour, mix well to combine evenly with the flour.
- Add sugar also to the flour mixture, stir well to evenly distribute with the flour.
- In a different bowl, beat the eggs and add the softened butter, mix well to combine.
- Also add milk, vanilla extract and lemon juice to the butter egg mixture, stir well to form the liquid mixture.
- Add the prepared liquid mixture to the dry flour mixture and stir well to form the batter. Make sure there is no dry flour left at the bottom of the bowl.
- Finally add the frozen blueberries to the prepared cake batter, gently stir in to evenly mix with the batter.
To bake the cake:
- Preheat oven to 375 degree Fahrenheit.
- Prepare a 9 inch baking pan by greasing with little oil and lining with parchment paper.
- Pour the prepared batter to the cake pan (the batter will be quite thick) and spread it evenly across the pan.
- Place the cake pan in the preheated oven and bake for about 40 to 45 minutes until the cake is golden brown on top and a toothpick inserted through the cake come out clean (if you insert the toothpick through any blueberries, there will be liquid residue from blueberries which is fine, just make sure there is not uncooked batter sticking to the toothpick).
- If the cake is browned on top but the inside is not completely cooked through, you will need to cover the pan with aluminium foil and continue to bake for another 10 minutes until the cake is completely baked.
- Covering with the foil prevents the cake from further browning on the top while the inside is still getting cooked.
- Once the cake is completely baked, immediately transfer the cake from the hot oven to avoid further baking.
- Allow the cake to completely cool down before you try to slice the cake or put the frosting on!
